Just listening to the Ministry album "In Case You Didn't Feel Like Showing Up" for like the millionth time and felt like throwing out this question.
What's great about that one in particular is that it has, what I feel, are better versions of the songs than the studio versions.

Counting Crows - New Amsterdam: Live at Heineken Music Hall. Counting Crows is an amazing live band and this recording a great example of it.
Blink 182 - Mark, Tom and Travis Show. Blink is a mixed bag live, sometimes they're great, sometimes they're very mediocre, but this album is an example of Blink at their absolute best. Great songs and the jokes are hilarious.

Coma Divine by Porcupine Tree. Captures my favorite era of the band (the more psychedelic 90s) and features 2 discs of a lot of rare songs they never play anymore.
Including this gem, which sounded very different live:
I also like Dredg's Live at the Fillmore album quite a bit.
