On the real...
From most to least likely:
some up and coming disposable heel (Wade Barret, Miz, or ADR) Triple H no match Mick Foley Mark Henry
Personally, I'd like to see CM Punk or a returning Chris Jericho.

Doink The Clown.
Doink : All you fans, you chanted Kill The Clown! Kill The Clown! Well the jokes on you! Because I'm still here! Undertaker, you think your all about your dark magic, the things people can't see coming.. Well I will be right in your face and my tricks will prove deadly.. Dead Man. At Wrestlemania, your streak dies dead man...

The only two matches I would be hyped for would be Jericho or Foley returning as Mankind.
The promos along for Mankind/Taker would be amazing, 10x better then the crappy HHH/Taker promos we got this year.

Who do you guys think it'll be? Here's a fantasy scenario I thought up: Undertaker comes to the ring after the Royal Rumble. "There is no one left here for me. I will retire...19 - 0." Suddenly, the titantron starts playing this clip: Taker stares at it and even mouths "what the f**k?" After forty-five seconds, it abruptly stops. Was this a titantron malfunction? One would imagine this basing on Taker's expression. For fifteen seconds after, Taker stands in the ring completely confused, until... You Spin Me Right Round by Dead or Alive starts playing. A titantron video comes on! Out comes Richard Simmons! The crowd starts going crazy! Taker stares on in disbelief! Cole and Lawler are not sure what to say, but Booker T goes "THAT'S RICHARD SIMMONS RIGHT THERE, YOU KNOW HE'S GOT A SPOT IN MY FAVE FIVE." Richard Simmons: "How are we all doing tonight?!?! Are we all having a good time?! Undertaker, Undertaker, Undertaker, I'm issuing a challenge to you. Your streak, versus my profession. Taker hun, if I lose to you, I'll close down Slimmons, remove my website, and get out of the limelight for good. Taker, accept my challenge, and I'll make you...*lifts microphone in the air and the crowd shouts SWEAT.* I'll make you sweat...Undertaker looks on in confusion, laughs at Richard Simmons, and walks to exit the ring. Richard Simmons: "Clearly SOMEONE has let their old age get to them! Guess you're just too out of shape big boy!" Right there, Taker stops, turns around, and does the throat slash motion to Simmons. In response, Richard Simmons turns around and slaps his behind to mock him. Taker looks offended, and the two stare off while Spin me Right Round plays in the background. NO! We do that outside!

That would be kind of cool. Undertaker's final match being against the son of the man who (kayfabe) brought him into the company in the first place.

Pure fantasy, but I would love to see a Taker/Muta dream match before both guys hang it up. In reality, I think the most likely opponents are Henry, Jericho, Trips or Punk.
Honestly, since this Mania is already sold on Cena/Rock, then Taker could sit this one out and attempt to go 20-0 at Mania 29.

Kozlov is still the last person to beat Taker clean one on one right?
Hire him back for that.

You. Go sit in the corner over there. Then I'll go join him because I agree. I just don't see Taker back for the next Mania.

In the offchance that it's not just a Legends deal that he's signed for, I'd say Brock Lesnar.

I've said it before, and I'll say it again. Vince McMahon. Who else has a realistic shot at beating him?

This proves that half the board just reads the title of a thread and ignores anything the OP has to say!

Henry seems to be intentionally building himself up for this. any promo now of his i keep expecting to hear him say "there's not a man alive that can beat me!"
<pause>
<Gong>
<crowd goes wild as Henry stands in the ring asking himself "why do we heels always have to put in that 'not a man alive' line all the time dammit!">
