Well... You can hide one guy in a 5-on-5 match, but now they've got to hide 2 guys. I guess it's possible one of the MMA guys turns on the Mafia. That would muddy a real MMA fight with a scripted wrestling heel turn though. That would be weird if Bellator showed footage of a wrestling heel turn to sell a fight, but I'm getting ahead of myself.
