It's also the one that features the moment I call the assassination of Fluttershy's character. Something that wouldn't be redeemed until three episodes later

Honestly the rant to Pinkie and Rarity comes out of nowhere, and doesn't just feel like words intended to hurt them for the moment. This wasn't just mocking their likes, it was full on telling them that their lives are meaningless and their pursuits are pointless. That's not something someone crazy in their assertiveness training would say, that sounds like something that someone was holding in for a long time. And if that was the case, it makes Fluttershy come off as a monster if that's what she really thinks of her friends goals in life, and something as easy as a change in attitude can have it come out of her with no thought whatsoever.
It's not just a random moment of bullying, it's literally telling her friends that they're worthless. For the element of kindness to even think that, even in a moment of being out of control in her emotions, that assassinates what her character is supposed to be.
And then "Dragon Quest" makes things worse by having her break a promise, fear or no fear.
Moral of the story, don't let Merrwether write for Fluttershy ever again please.

It also comes off worse than her discorded self. The worst she did there was drop a bucket of water on Spike and Twilight then play keep away with the elements book. For being a crueler version of herself in that episode, she never resorted to telling Twilight that her pursuits were pointless. And in that case, it could have even been forgiven seeing as she was under a spell.
Here there's no spell. No manipulation. The reasons for Fluttershy's abrasive actions are of her own mindset for taking lessons in assertiveness way too far, and the result has her do something far more cold and wrong than anything she did as her discorded self.

I guess what redeems her in my opinion is that she immediately realizes herself after that, that she went too far and hurt her friends and feels awful about it. She comes to being wrong herself (unlike Dashie in MDW for example).
And that scene in Dragon Quest...I see it like this: I was deathly afraid of wasps as a child and I overcame my fear as I grew up. I don't mind them as much, but I would not jump for joy exactly if somepony invited me to a wasp migration or something. I would probably do everything to get away from that as well (and ask my friend to please do something else).

But would you make someone do something under the guise that you'd promise to do something you don't like in return, then bail on it?

I would agree that it would be low, but from the dialogue I cannot see that Fluttershy promised Dashie to watch the dragon migration in return. From the way it sounds, it is not even clear that Fluttershy even promised her anything.

It still comes off as backing out of a deal in either way, which is why I have honestly never watched the opening since the first watch since because it bothers me that much.

On perhaps another viewpoint, you could say that Fluttershy could be hurt that something she thought both her and Dashie enjoyed would be used by the latter to pressure her into doing something she was afraid.
One could argue for both our lines of thoughts.

I'd rather she not write for anyone in MLP ever again. Translation, I want her to stop writing for MLP period. She cannot go through an episode without making someone a pure asshole. And if she isn't making a character suddenly become a jerk, she writes several characters out of character. It makes you wonder if she even watches the show or reads the scripts for the other episodes, cause her episodes are never, ever, ever in sync with the characterizations of the cast in the rest of the series. Look, I am sure she's a talented writer and does a good job writing for other shows. For me, she just can't write an episode of MLP:FiM worth a damn. After so many tries, all I can expect from her name appearing in the credits is mediocrity at the best, utter garbage at the worst.
