Undertaker, in his final match, putting the streak on the line one last time against John Cena in an I Quit match.
Do everything in the world to make people think Cena can and will win but then in the end have him finally give up or pass out and Taker walks into the sunset with the streak intact.
Really, anything other than this as the main event is going to disappoint me. I'm not that interested in Taker facing Lesnar and Cena against Bryan or Punk again would be great matches but I've seen them too recently for them to feel like huge Mania main events.

It happened this year didn't it? Oh yeah. I sort of shut that out of my mind. To be fair, before WM29, it'd been 10 years since a guy won the Rumble and proceeded to win the WWE title in the main event of WrestleMania. So it's not exactly a common occurrence.

Bryan wins the Rumble, and faces Hunter (WWE and WHC Champion) at 'Mania. Cena battles Taker, at Taker's behest. Brock vs Rock, if they both must be on the card. Punk finally baits Austin in that match.
They can do what they like with the rest of the card, but that's what I'd buy/want on the poster.

Really, the only BIG main event match they can put together with guys currently on the roster (and that includes Undertaker/Hunter/Brock, since they're all signed to deals, even if they only wrestle occasionally) is Cena vs. Undertaker, and I've got the feeling they'll do Lesnar vs. Undertaker instead, since this might be their only chance at it while Cena will still be around in 2015.
So that leaves bringing in some huge name... and who do they fight? We just did three years of Cena versus a beloved veteran legend, and the rest of the active roster is a bunch of scrubs who no one can take seriously. So... that leaves Triple H, who fits since he's already been the top heel since Summerslam.
I'm not sure which main event I want more: HHH vs. Hogan, or HHH vs. HBK. The later would be a better match, but the former would make for an even more electric crowd.
Of course, the reactions to either match on here would be... colorful, to say the least.

I'm in the camp that Undertaker should not lose at WrestleMania, but I am not calling for him to retire at Mania XXX unless he wants to. If he feels he can perform at a high level at Mania after Mania XXX and that his body is healthy enough, I want to continue to see him at Mania.
IF Undertaker wants WrestleMania XXX to be his last match, then the PPV should close with his match.

They already did HHH vs. Hogan. HHH had to more or less wrestle himself because Hogan was so broken down, and that was over a decade ago.
