That Brock vs Big Show match for the title...not sure it was under 5 min but it was damn short and damn good.

David Otunga vs. Zack Ryder. Both guys looked solid despite the general perception that they "can't" wrestle.
Any Tons of Funk vs Wyatt Family match. Four solid big man workers. I wish they would get more time and the outcome wouldn't be so obvious though.
Alex Riley vs. Antonio Cesaro. One of Cesaro's earlier matches. I liked how Riley got a Lilian Garcia level pop despite getting a jobber entrance with no music. Despite being nearly equal in size, the two of them had a huge contrast in styles, Cesaro being the rough powerhouse and Riley doing what he does best as the explosive speedster. Enjoyed Cesaro stopping Riley's comeback dead in its tracks by grabbing his ear and doing that uppercut.
Alex Riley vs. Dolph Ziggler at the Great American Bash SmackDown to qualify for MiTB.
Alex Riley vs Dolph Ziggler 8/6/12 RAW. Not as good as their previous encounter but I liked that Riley won.

For all the crap that Warrior gets, there are at least 3 matches of his that almost everyone remembers almost every step of. I loved this match for all the right reasons.

Zack Ryder(w/ Hugh Jackman) vs Dolph Ziggler on Raw. Any match involving Wolverine is amazing by default. I liked how Jackman looked knowingly at the camera, then hit Ziggler with a terrific punch. That was one of my favorite celebrity involvements, it fell into place perfectly.

Bryan/Sheamus from Raw in 2010. The week before, they had Sheamus pound the piss out of him in about 30 seconds, but the following week, they had this incredible and competitive 5 minute match that felt so much longer than its actual runtime. I remember this one random Zack Ryder / Shelton Benjamin match that was like four and a half minutes long but very, very good.
Also going to have to vote Orton / Jeff Hardy from the Raw before the 2008 Royal Rumble, just for the hilarity of it. Even if really it made the Intercontinental title look pretty worthless.

"Dolph Ziggler"'s debut vs Batista was one of my favourites.
I turned to my friend and said "This guy is going to be a star!". I'm usually pretty wrong about that stuff, but the night after Wrestlemania I turned to the same friend and said "See! I told you!" and he just said "...what?"
But anyway, Brodus vs Cesaro is a more recent example, i'm not even sure the match was that good, but the ending was amazing.
