Test and Charlie Haas bled brown blood in Here Comes The Pain, and Eric Bischoff was unable to be busted open if you choose his suit attire.

SYM is ridiculously easy. I'm playing for the first time in maybe 10 years and I'm squashing people on Smackdown difficulty.

WrestleFest was the first WWE/F game to have a steel cage match and Royal Rumble in it.

WWF Royal Rumble for the Dreamcast has a Royal Rumble w/ up to nine people in the ring at the same time.
The SmackDown! fist first appeared in Just Bring It.
Apparently in SmackDown vs. RAW, a parking lot brawl has two people duking it out, with a circle of cars around them.

SYM had a climbable fist on the Smackdown Arena
Day of Reckoning had a climbable Ambulance in the Survivor Series Arena
On WMX8, entrances would end on the ramp section if you were doing a Cage or Hell in a Cell match, due to the structure cutting access to the ring.
Edit: Also, in WM21, Triple H is only the Dragon to Kurt Angle, who's the big bad of the entire game, if I recall correctly.

For reasons unknown, Day of Reckoning 2 and SvR 2006 don't have Christian's Cs on his tights.
Rikishi was a bad man in WWF SmackDown! Just Bring It (the first game to use "Bad Man" as his theme).
WWF No Mercy: The Undertaker's 4th costume is his Ministry appearance.

Whereas you can knock over the ref many times without consequence in WWF Royal Rumble (the SNES game), the same can't be said for the referee in WWF Raw, who'll bail on your match if knocked out a certain amount of times.
