I keep hearing about the cliches of driver instruction schools showing those "red asphalt"-type films showing traffic accidents, but when i took driver's ed, we had none of those. We did get a safety video, but it was more about people who survived their car accidents, no gore here.

probably because "Scared straight" tactics are questionable in their effectiveness.

I don't remember anything outright gory, but a lot of the videos didn't exactly have happy endings.

I want to see if anyone else knows what I am talking about, or was this imagined. My brother said he saw this PSA filmstrip, "Playing Chicken With The Train" when he was in grade school. Basically, it involved some teens who tried to do dangerous stunts by a railroad, ending up in them sticking their heads out towards an incoming train and getting decapitated somehow (really).
Does this ring any bells?

I took driver's ed in high school and I can tell you first hand that they do show them. I think one was even literally called, "Paint the Sidewalk Red...With Blood!" Lol, so it's not just a Simpsons reference or whatever show used that joke.

My class didn't. We watched a few insanely out of date, Ford-sponsored instructional films from the 60s. (EG: "Wear your seatbelt when possible." "If you believe that someone is going to be up your ass, honk twice and politely wave." "When traveling on our nation's new interstate transit system...") The extra-gory video, complete with Troy McClure style live commentary, was shown to the entire school.

Does this ring any bells? When I did my graduated license education in 2002-2003 in Michigan, we had segment 1, then we get our permit, then segment 2, then we got our license. The entire focus of Segment 2 was trains and how you shouldn't get hit by trains or race them or any of that shit. They showed us several videos on the subject.
