It looks like he is going to one of the most healthily adjusted wrestlers ever, coming and going as he pleases to keep both his body and his pop fresh.
But, if you had to retire Jericho for realises, what would you do?

In WWE? Easy, he shows up for a match, and regardless of opponent, winds up being Pedigreed and pinned by Triple H. When Jericho leaves, he leaves on a loss, not a win, and it would just be oddly fitting for him to just have one more L to H again.

My thoughts are the opposite actually, we've seen Jericho go out on his back so many times I'd actually enjoy for him to come out on top just once - going over a vet rather than someone who needs to be built up however.

I think Seth Rollins would be a choice (of course by this time Shield would have split and all three will be having different timelines to the top and as legit singles main eventers). I could imagine them having an epic 20 minute match as well.
Sami Zayn would be another, any young gun that echos Jericho's technical in ring skill to pretty much become his unofficial protege once he would retire

My thoughts are the opposite actually, we've seen Jericho go out on his back so many times I'd actually enjoy for him to come out on top just once - going over a vet rather than someone who needs to be built up however. Why not have Jericho win but suffer a "career ending injury" during the match as a compromise. Jericho gets the rare last win but leaves in a lot of pain.

They have to bring Lance Storm back for Jericho's final match. I'd love to see Jericho's career put on the line in a tag tournament, and for him to bring in Storm. They could get through to the final match on PPV where they lose and Jericho goes out as a Thrillseeker.

I say just let him leave quietly. Don't have him "put his career on the line" or "get taken out" because been there done that multiple times and it ultimately meant nothing.

Unless Jericho asks Vince not to do a retirement angle for him, Jericho and what he has done in his career deserve his last moment.

Jericho has said in interviews that he doesn't want the melodramatic, sentimental sendoff. If Jericho wants to put someone over on the way out, that's fine. But what I'm saying is that he's given so many people the rub of "ending his career", that I don't think his final match should be a tired and played out "if you lose, you're done" match.

Jericho's always said he wants to go out on his back; preferably kicking and screaming and whining if he's a heel.
Have him do one last return: taking on WWE World Heavyweight Champion Daniel Bryan. Storyline is Jericho was the first Unified Champion, feels he deserves to retire as Unified Champion.
Echo how D-Bry and Jericho both toured the world, wrestling is different countries to hone their craft. Both guys made their way from the bottom and became huge because the fans loved them. Jericho's not really full heel in this storyline, the closest he comes is being a little bit underhanded during the match, but that's played more as his veteran instincts.
Do a few weeks of back and forth, both guys trying to one-up each other on Raw and Smackdown. D-Bry beats the Shield in a handicap match, Jericho does the same the next week. Bryan makes Ryback tap in a minute, Jericho beats his time.
Give them half an hour to just blow people away. Finish comes when Jericho locks in the Liontamer variation of the Walls dead set in the middle of the ring. Bryan manages to muscle out of it, reverse it into the Yes lock, and Jericho taps. One final handshake at the end and Jericho bows out for good.
