I think one thing that people are forgetting about selecting The Beatles is that it would not be like attending one of McCartney's concerts (which I can personally attest is amazing). It was routine that no one really could hear the band play at any of their concerts after Please, Please Me came out because the incessantly non-stop screaming was louder than any soundsystem available at the time. In fact, Lennon was known to take advantage of that fact and replace all of the lyrics with X-rated lyrics to amuse himself since no one could hear him sing anyways.
In light of that, I guess my pick would probably be Queen during their last tour.

Queen, without question. Circa '79 - '82, where the band, especially Freddie, where at their absolute peak as performers (Crazy Tour, Rock Montreal, Live at the Bowl).

Another vote for Nirvana, although wanting to see the Ramones, Sex Pistols or the original Blondie line-up at CBGB intrigues me and has me hedging on my choice.

I wouldn't pick The Beatles because by the time they made their best stuff they quit being a live act and the sets from '65 and '66 were robotic, contractual obligation. The sets before that were so packed with screaming girls (and floods of urine on the floor) that you'd not exactly get a great gig out of it however well they played.
My pick is Pink Floyd at basically any time, but probably during The Wall live shows or in either 1974 or 1977, when they were touring their best mid-period stuff but not leaning on Dark Side THAT much/had embryonic versions of that later material with Dark Side and some old ones thrown in.

At first I picked The Beatles, but I feel like that's an assumed or something. So then I chose other for GNR, when they were on the Strip playing places like the Troubadour. I too am choosing GNR in the classic days, If i could have a weird time machine and see them in different eras...like to go back to the very first GnR show mainly just to hear how they sounded back then to hear where they were vs how they sounded after Slash, Duff, and Steven joined. then i would go see them pre AFD when they were still working some things out, where "goodnight tonight" was the closing song and the early days of Dont Cry, plus just to see Izzys actually move around the stage and be super into the show as while the illusions tour had the far better setlists, Izzy was just so unmotivated at that point and just stood right near his amps and didnt move around too much.
