Never ever watched it, but I've heard good things about it, and I would like to give it a try as opposed to the main product. I'm guess I'm looking for match recommendations, which superstars to check out, segments, anything to get caught up.

There's many a world class wrestler on NXT. Sami Zayn, Adrian Neville, Kevin Owens, Finn Balor, and Hideo Itami are all going to be highly successful in WWE in the future.
Enzo Amore and Big Cass are always entertaining. Bada boom, realist guys in the room!
Baron Corbin squashes are also fun for as short as they are.
The NXT Women's division with Charlotte, Sasha Banks, Bayley, Becky Lynch and Alexa Bliss is also nothing to sleep on.

Off topic, but I kind of want someone to have a sign where someone puts a Naughty Dog logo and has Sasha and Becky labeled as "Ratchet and Skank".

Don't have the dates handy but for matches, watch any of the singles title matches from ArRival or Takeover specials. Also any of the Sami Zayn/Tyler Breeze or Sami/Cesaro matches.
For a segment watch Bo Dallas's exit from NXT and Finn Balor's debut. Oh and the Sami/Adrian Neville interview before the last TakeOver special.

They are hour long shows. I would do 3 hour blocks like RAW on Tuesday or something and just catch up that way. Alternatively, you can't go too wrong with checking out NXT Takeover 1, 2 and R-Evolution, the PPV equivalents, in their entirety.
Honestly there is no bad material in the lot of it. I miss more RAWs and Smackdowns than NXTs.
EDIT: I'm only referring to the run that was broadcast on The Network. I didn't watch any of it before then.

Once you've done that check out Regal vs Cesaro too (including their pre-match promos). If you were a Shield fan then add The Shield's NXT debut promo (12/26/12 ), the Rollins vs Graves Lumberjack match and Rollins vs Big E title match, don't expect too much it's just what I remember enjoying.

Myself, I went on a good two month hiatus from watching NXT (last episode I saw was the October 16th episode) or anything else on the Network. But now I'm watching the R-Evolution pre-show (to get caught up on what I missed) and then the R-Evolution show itself and the follow up episodes as a jumping back in point.

Just watch the most recent Takeover, R Evolution, and go from there. That show was NXT at it's best, and it set the table for everything going forward.

Maybe start with the first NXT Arrival special and then watch all the other NXT specials (Takeover) and culminate with R Evolution. This would be a good way to get into it.

I'm not going to exaggerate, but NXT is the best show WWE have ever produced. Yes better than anything in the Attitude era.
Just start watching weekly. That's the best way to get into it.

The best way to go short of watching all of 2014s episodes on Hulu plus, the Network, or less legal ways. Those three "PPVs" with their accompanying packages hyping the matches, and then the episodes after R Evolution (IMO their best speciel this year besides Mania and maybe Summerslam) will get you there. Plus, this past Thursday's episode was a clip show, looking back at 2014, so there you go. You're at a good place to jump in with only about 5-6 shows to watch. And if you like womens wrestling, you're in for a treat. Actual wrestlers in the Diva's division who are allowed to have real matches and stories.
