Honestly, I feel like anything apart from the pike would lead to me leaving my own body parts on the battlefield. Unless mine was broken, I doubt I'd even get that far, no matter what style I chose.

Standard, if it's good enough for Obi-Wan, Luke, and Rey, it's good enough for me. There is no way Rey won't have a staff or double sided one that she builds. Her weapon of choice was a metal quarterstaff before her Force powers awoke.

Standard - if it's good enough for any of the Skywalker clan then it's good enough for me.
I always thought it was poor how Darth Maul had the double bladed lightsabre, but it was meant to be set before A New Hope. Surely the double bladed sabre was seen as progressive? Just another flaw with the Phantom Menace...

Just another flaw with the Phantom Menace... Stuff like that was all over the EU. Exar Kun had an even fancier double bladed saber that allowed him to change how wide his blades were and could make them solid or not, and that was in a comic published in 1995. (And he himself was alive years before A New Hope.) I wouldn't be surprised if he wasn't the first person that had a double blade in the books/comics/etc. Also Episodes 3-6 were after the Jedi order was destroyed and all we saw in the movies were 3 people that used a saber Vader and Obi-wan whose fighting style used them like Broadswords and Luke who was learning how to use one... a double blade seems like it'd be a bit more advanced with more opportunity to cut yourself in half.

Just another flaw with the Phantom Menace... Sorta. To not progress too far into the EU, basically, the double-bladed lightsaber is seen as a Sith invention and overly aggressive, and was sort of not encouraged to be generally used. Not that you couldn't mind you.

The double-bladed lightsaber I believe was originally invented by the original Dark Lords of the Sith. Exar Kun made one from a Sith Holocron some 4,000 years before A New Hope. It was made canon by Darth Maul in Episode I and the Inquisitors use a variant that can spin in Rebels. Asajj Ventress wielded a pair of curved hilt lightsabers that could be joined together to form a single double-bladed saberstaff. The Temple Guards also used double-bladed sabers with a longer hilt.
It was the weapon of choice of some notable EU Jedi, too, like Bastila Shan and her descendant Satele.
Anyway, if anyone was wondering I'd go with the double-bladed. I love that fighting style.

I wonder, it is possible to make an Light-Axe? Is there any fanart of such a thing floating around out there?

My favorite used to be Maul's double sided one, but now I like Kylo Ren's cross guard one. I mean it's so evil it's on f***ing fire!

My favorite used to be Maul's double sided one, but now I like Kylo Ren's cross guard one. I mean it's so evil it's on f***ing fire! There apparently is an in-story reason why that is: he used a cracked crystal, thus the need for the sidebars to vent it and why it looks so ragged.
