I'm making my way back through original Star Trek on Netflix, and on several of the episodes, Kirk is not in his traditional gold shirt but rather this jaunty little number: I knew he'd worn it a couple of times, but this is like the third consecutive episode he's got it on; meanwhile everyone else is still in full dress uniforms. Was there any "kayfabe"/storyline reason at all for this shirt, even one fans made up later?

IIRC, it was originally to help tell Good Kirk and Evil Kirk apart.

IIRC, it was originally to help tell Good Kirk and Evil Kirk apart. Kind of. The casual variant was first worn by Charlie X in that episode. They later used it as a variant uniform for Kirk to tell the good and evil apart. And it was green because all the command uniforms were green. But the material used by the common uniforms filmed as a gold color. Kirks casual shirt, as well as the command dress uniforms, filmed the true green color. Picard later had his own Captain variant.

The insignia just being sort of cock-eyed and on the bottom right of the shirt is kinda weird too. It's like they forgot it was standard Starfleet issue till the last minute.

I liked it, if for no other reason than it was the precedent for TNG's, which I liked the best.
