There's kind of a false premise in the OP. Not many people say they'd RATHER watch big guys than AJ etc. (some do, but they're in the minority) Most people like the worker guys and the big guys too.
As far as why people like big guys in general, that's not hard to figure out: wrestling is built on larger than life characters. If your physicality literally exemplifies that, you are going to have fans. That's one of the bedrocks of the entire business.

Larger than life characters. Say what you will, if you saw Great Khali and Chris Jericho on the street, you wouldn't remember Jericho, but Khali would be part of your day's story. Hell, even now, you probably wouldn't notice Kevin Owens among a general crowd at Target.

It's the same reason why people like Transformers and the Fast & Furious films Sometimes people just wanna see s**** get wrecked I thought it was because they had never seen the superior Go Bots cartoons.

As much as I've always loved cruiserweights etc, there is just something fascinating about a guy ragdolling someone.
Titus O'Neil is dangerous as shit in the ring but watching him annihilate guys is fun.
Oh, and the Undertaker is f***ing dope.

Wrestling in Japan was built on big westerners wrestling smaller Japanese guys. Small foreigners like Styles and Omega main eventing for a major company is a very recent development.

Big guys are needed in wrestling. If everyone looked and wrestled liked Sami Zayn or AJ Styles, fans are going to get burned out of the indy-wrestling style. They need big guys to add variety.
If fact, I'd say WWE needs more big guys today.

Honestly, I don't know how you can watch the best of Stan Hansen, Bruiser Brody, Mike Awesome or for more modern takes, Mantanza Cuerto or Mil Muertes (NOT El Mesias though. LU uses him way better than AAA ever has) and not be entertained.
Now the part that is more controversial is the giant style wrestlers. The Babas, Khalis, and for the wider versions, the Yokozunas and Nia Jax.
For me, I like the aspect of effortless destruction. Like they wrestle in a world of paper people, crushing them with every move. But it has to be balanced by their lack of stamina and speed.
Takes covering your bases so you don't have a speedy wrestler chopping you down. I love that cut off game, waiting for the small fry to finally get caught and crumpled. The fear it instills, kayfabe wise. The strategies smaller wrestlers use to take them down, and seeing if the giant can figure out a way to regain control.
OP, I think you should watch some of either Chris Hero's post E matches or some Big Van Walter matches. Maybe that will help.
I... Uh, like most wreslting styles tbh.

I remember being at a taping of wwecw, and there was a match between CM-punk and John Morison, and being slightly more impressed by the squash match with big Daddy V.

also if you watch it live. There's something really crazy about seeing a 400lb guy fighting and falling, sometimes it's more impressive than the smaller guys doing crazy flips. I remember being at a taping of wwecw, and there was a match between CM-punk and John Morison, and being slightly more impressed by the squash match with big Daddy V. I wasn't bored with a Punk/Morrison match..... but I also enjoyed a Big Show/Khali vs. Brothers of Destruction, but I liked these for much different reasons. For a blend of both, try to find the "rasslin match" between Big Show and Kane

And there is a lack of big guys. You look at Raw and the biggest big guys are Big Show, Mark Henry, Brock Lesnar, BRRRRRRAAAAAUUUUUUNNNNNNNN, Big Cass, Big E, and Rusev. Three of those guys have been wrestling since 2002, Big Cass is a small lanky big man who doesn't wrestle big or with a mean streak, Big E's nerdiness overshadows his world class powerlifting credentials, and Rusev is a short stocky dude who would be considered small in the 80's/90's. That's why Braun heavily sticks out. Dude is really the only super hoss WWE has produced in years and they had to skip out NXT TV Development to get him on the main roster.

For me, it's not just about "big guys," it's more about monsters who can just wreck everything. That's why I love seeing guys like Braun, Vader, etc.
I wouldn't be compelled to watch Baron Corbin if they said he was going to flap his arms and fly to the moon. Dude is just complete and utter dog shit in every possible way.
