The Street Fighter anime movie had some fantastic fight scenes. First one is warning for some blood:
I'd post the Chun-Li vs. Vega fight as well, but with the panty shots and blood, not sure about doing so. That one's even better though.

Winter Soldier had some of the best battle choreography in action films I've seen in a while, not just comic book films.
I'll also second Atomic Blonde and add the John Wick movies so far.
Also, the church fight in Kingsman 1. There are probably more but those are recent examples.
The Bob Barker/Happy Gilmore fight and the Piper/Keith They Live brawl.

The World’s End has a couple of amazing fight scenes. The one in the toilets is crazy enough but then the all-out brawl in The Beehive out-does it.

The Cave Orgy Fight in Conan the Barbarian (The Good One) Has so much going for it: Cannibals, Orgy, the incredible soundtrack, snakes, the brutality of the fight, the area that was both a cave and an intricately decorated chamber... and a giant son of a bitch painted up like this:

Aside from Atomic Blonde, John Wick which were already mentioned the US scene is REALLLLY weak on fight scenes....the foreign market does it way better.
Some of the more recent films with good action that I've seen...
Headshot had some terrific fight scenes.
Kill Zone 2 - legit some of the BEST damn fight scenes in recent memory. The prison breakout, the warehouse - that movie was wall-to-wall 5 star fight scenes.
Hardcore Henry - did some amazing stuff with fight choreography from the first person perspective. The ending fight scene was really well done.
The Villainess - had a very strong opening first person fight sequence and then some great assassination stuff throughout.
Joe Lynch's Mayhem had some really fun action sequences too.
Bushwick - damn good camera work on some of the gunfights and hand to hand stuff. Really smooth, long takes to capture the choreography.
And - okay, he gets shit on a lot and most of it rightly so, but Snyder's action bits in JL are some top shelf stuff for the superhero genre. People laugh about it, but 300 was filled with these amazingly fluid and poetic looking acts of violence and some of that translated to his portions of JL too. Say what you want about his story/character work - but if he were JUST a cinematographer he'd be doing some great shit.

Too hard to pick just one, but this one has got to be up there
Fight scenes are always better when there is emotion involved, which is why Luke vs Vader at the end of Jedi is still the best lightsaber duel in my opinion.
