I thought the wrestler's name was Biff Wellington? And he should have been in a tag-team with "Beef Stew" Lou Marconi, who as a youth always read it as Lou Macaroni

I've done that recipe a few other times. the chestnuts don't really add anything
he also has a recipe for a red wine sauce on his website that goes great with it, just know it takes quite a while to make (it's not difficult, it's just that you have to reduce an entire bottle of wine which takes a couple hours)

I've always wanted to try it, but I'm not a fan of mustard(which I believe is one of the bindings/fillings.)
I'm not sure if there is a fitting substitute.
