Or is it rather an elseworld story?

It wouldn't be an Elseworlds story. Elseworlds is DC.

First Jackman said it was in its own timeline, then Mangold said it followed Days of Future Past, then they said it was in its own stand-alone timeline again. And then Apocalypse came out and nobody has any idea anymore.
Personally, I liked Logan as Wolverine's "Whatever Happened to the Man of Tomorrow?" story rather than the actual canon endpoint of the X-Men films, so I treat it as its own thing and am just fine with DOFP as the definitive bookend to the FOX films.

Honestly I'm convinced that there's three different timelines in the X-Men Film verse at this point
-Wolverine, First Class, X-Men 1, X-Men 2, X-Men 3, The Wolverine, Logan -Days of Future Past Bad Future -Apocalypse, Dark Phoenix, Days of Future Past Good Future
My headcanon is that there will be some attempt at undoing the Transigen virus created by Rice via time travel which will indirectly create the sentinels somehow, which itself is undone by the events of Days of Future Past.
Logan is thus what happens in the original X-Men timeline and everything we see in Apocalypse and after is in an alternate timeline.

I just stick to assuming it follows days of future past because that is the one that would make the most sense amongst all the other headaches.

From what I gather James Mangold said it is and Bryan Singer said it isn't. So they can't agree on it. As awesome a movie as it was though I think it's better left to it's own devices because if it's canon to the other movies it kinda makes the rest of them kinda pointless. Works best as an elseworld like the original Old Man Logan story, I think.

I lean towards it being an Elseworld story with tangential links to the other timelines.

I just know it's basically the best or second best superhero film of all time.
Good Lord did I enjoy that movie, and was it ever refreshing.

I'd say it follows xmen, x2, x3, the wolverine and then logan.
xmen, x2, x3, first class, days of future past wipes out x3 and its events as well as the wolverine (the meeting of old prof x with young prof x enables them to save jean & the rest by him giving prior knowledge of whats to come).
apocalypse can fit into either timeline as prof x sees just how dangerous jean can be at full potential without guidance.
Deadpool is off in it's own timeline/universe/bubble of insanity.
there is no origins apart from the opening credits/first 10 minutes.

I always thought it was the end of the original X-Men timeline.

Does it really matter?
Is your enjoyment of the film dependant of what timeline it falls into?

Their canon is so messed up anyway, who could tell? Seriously, They have retconned things with every single sequel.

It's not canon.
The initial "it's canon" talks were to place it as some sort of alternative universe had the events of Days of Future Past not changed things.
As it stands, it has absolutely no connection to the other X-Men films whatsoever, other than the same actors.
The vagueness of this I've always felt is the film's biggest flaw.

Cannon or not it was a decent film. I would have rather it been more like the Old Man Logan comic. But I know rights issues prevented that. But it would have been great to see the Spideybuggy on the big screen.

I will echo the sentiment that Wolverine as a Western was amazing.

The X-Men movies' continuity is basically a convoluted gibbering nightmare where basically nothing makes sense movie-to-movie anyway, why start making sense now?
And this is why you'll probably never see a more accurate X-Men adaptation.
