My country sure does know how to cook a pig. Lechon, adobo, lechon kawali, crispy pata, bbq or chicharon isaw or bulaklak, betamax, sisig, liempo. Lots of delicious pork.
Personally, I like boiling pork belly, then frying that up until the fat is in a rather crispy texture. Just have lots of rice to go along with it and it's a meal that'll keep me stuffed. Also, an aunt's recipe for BBQ, gin and salt, is one of my favorites during New Years.
