Some strong contenders, I think.
But for me, you can’t beat Ric Flair winning the ‘92 Rumble.
Nothing better than Monsoon going from taunting Heenan about Flair being doomed to having to eat his words by the end.

Probably not THE most but I'll throw out Big Show beating Sheamus for the title in 2012

Bray Wyatt defeating Cena and AJ Styles in a triple threat to retain the WWE title is one of the most impressive. No fluke, no swamp magic, but beating two of some of the most credible main eventers of the 2000s onwards.
Honestly, I am wondering if he is the only person besides Brock with wins over Roman, Bryan, AJ, and Cena. (Albeit, I am not sure if he's pinned Roman clean or not. I know the Wyatts have defeated the Shield before, but not sure who got the pin and who took it. Still, he's beaten all four of them at various points.)

Kevin Owens beating Cena. I remember reading the live reaction and it was literally a “...wait, that just happened???” Kind of moment.

Yeah, the original Shield / Wyatts match ended with Bray pinning Roman.

Vladimir Kozlov pinned The Undertaker clean on Smackdown once I think. That's a rare thing.

Lesnar beating the ever loving crap out of Cena at Summerslam. For as much hate as he (rightfully) gets at times, JBL sold the ass kicking when after the second or so barrage of suplexes, he just mutters "jesus christ..." as Cena is laying there a crumpled mess

Khali beating the Undertaker clean, pinning him with a foot to the chest. Man they must have had sky high hopes for that big goof.

Owen beating Bret at WMX as to be up there Wrestlemania X is one of my favorite stories, Owen finally gets a win over his brother and gets to gloat and get the respect he deserves only to be overshadowed again by his brother winning the title back in the main event.

First thing that came to mind was HHH beating Cactus Jack at Royal Rumble 2000. Cactus even had help from the Rock and couldn't beat him.

Really took the shine off the beating to my mind.
