NJPW had a bunch in the Inoki MMAdness years. Tsuyoshi Kosaka, Bas Rutten, Jan Nortje, Lyoto Machida, Josh Barnett, Don Frye, Musashi and many others. And this is not counting guys who started as pro-wrestlers and went into MMA and back like Bob Sapp. War Master was even a title contender at a Wrestle Kingdom. It wasn't a Wrestle Kingdom. It was WRESTLING WORLD 2003. Wrestle Kingdom is what they call the post-Inoki Tokyo Dome January 4th shows.

Mark Coleman comes to mind. I know he wrestled for one of the Japanese promotions, not sure which one. Didn't he team with Kevin Randleman a few times? I could have sworn that he dabbled with professional wrestling as well.
