Liger having the anime theme song fit for obvious reasons.

People mentioned Brock's theme, but Goldberg's WCW/second WWE run theme fits just as well IMO. Slow march for a guy who is just ready to wreck you.
And how have we gone this long without saying The Undertaker in pretty much any of his non-Biker themes? ...though I will say I have a weird affection for "You're Gonna Pay".

I like Rick Rude's themes, both the WWF stripper one on WCW's "Simply Ravishing." Sting always had cool themes.

Both major themes that Hiroshi Tanahashi has used in NJPW perfectly convey the feeling that he's an anime protagonist in the midst of a climactic final battle at the end of a story arc and is screaming something like "TAKE MY HEART, TAKE ALL OF MY ENERGY, AND ALL OF MY LOVE!" after getting up from nearly being killed, and as he delivers the final blow to some evil sorcerer or giant robot or something.
Also, just because of the way he carries himself and his overall demeanor, I freaking love Dr. Wagner Jr. using "Bad Medicine" by Bon Jovi, just makes him seem like the biggest self-loving jerk and it works so damn well.

Taichi’s psuedo opera theme song is the most pretentious thing you’ll ever hear. It suits his pompous scumbag persona very well.
Ishii’s music is a grinding rock song with a steady beat that goes into different styled hooks. He’s a brawler with range, so yeah.
