If I'm buying it at the store, salmon or tilapia. It's easy to make, it pairs with just about anything. If I'm out, then sea bass or trout. I tried tuna, but it just reminds me of the smell of cat food. Hard pass.

Walleye cheeks are pretty damn good, but it might have just been because my father in law made them. He's an avid outdoorsman and cooks it all REALLY well.
If you're passing through Chicago be sure to hit up Calumet Fisheries, an old school place that sells smoked fish. It was on No Reservations. Totally worth a detour. Don't waste money on the sweet potato tots, just get the smoked fish or shrimp.

Swai is my fav right now. Tuna and salmon are ok, but I'd love to try them a new way. I've had too many salmon crockets in my time. I love shrimp. One of my favorite places in town has muscle in their name, but I've never tried them.
