The BSG remake, whether you think the miniseries is the pilot or “33” is. Both are absolutely captivating.

Yeah, Twin Peaks is very hard to beat. There's plenty of weirdness and mystery, but the centerpiece is Grace Zabriskie's grief. It let you know this was a character show as much as it was about mood.

You learn who all the main characters are, what their personality traits are, and you see the title character grow as a person in the first 30 minute episode.

Arrested Development had a pretty well done first episode that did a good job setting up all of the characters, plot threads and even a few of the running gags that would play out throughout the series.

Underrated show. Frazier has a great first episode too, instantly established the chemistry between the cast. Teen Titans had a great pilot episode.

The Shield is a classic, but I’d also throw out The Leftovers as a great example for establishing tone and characters, and ending on a super unsettling note.

Clerks: The Animated Series' pilot (the ACTUAL pilot, not the first episode ABC aired, of course) is still one of my favorites. Granted, it was only around for 6 episodes, but it's definitely the one that has some of the best jokes and probably one of the best starts. I hate that it got canceled so quickly.
