It is a weird line to walk since wrestlers in general have a set of "moves" they always use
But sometimes you get a move that is considered almost a finisher, but not really.
For example:The V-Trigger.
At one point AJ's Flying Elbow.
A move that defines the wrestler/characters,which moves would you classify a Signature Move?

I guess in those cases, they are sometimes finishers. Like AJ has definitely won matches with the Phenomenal Forearm (unless you mean a different elbow), and Omega's pinned people with V-triggers before. But if we're talking signatures that wouldn't be classified as a finisher at all but were still a signature, I'd give the Rock's spinebuster as an example. He'd mention it in promos sometimes (as "pinebuster" sometimes as an in-joke about Pat Patterson calling it that due to English being his second language), so it was one of his key moves, but not a finisher or secondary finisher.

Matt Hardy’s Side Effect. Announcers would put it over like a match ender but I can’t ever recall it finishing anyone.

The People's Elbow.
Arn's Spinebuster... he may have won matches with it but it is more of a 'set-up' move.

Scott Hall's fallaway slam.
Greg Valentine's "hammer" elbow drop.
Kevin Sullivan's tree of woe.

Has Roman Reigns ever won a match with the Superman punch?

Matt Hardy’s Side Effect. Announcers would put it over like a match ender but I can’t ever recall it finishing anyone. There was that infamous ECW tag match where the ref counted three after a second rope Side Effect, but the match wasn't supposed to end yet.

Commentary likes to put over Baron Corbin's Deep Six...even though he's only won, like, one match with it.

Has Roman Reigns ever won a match with the Superman punch? Yes, caught Kofi coming off the top with it once. Only one I can remember though.

Evil's Darkness Falls. Way more impactful than the STO but have only ever seen it get three once and that was a botched count.

The Stinger Splash The Undertaker had several as year went on. The Choke Slam has won matches mostly against guys he couldn't Tombstone or Last ride depending on the era. A couple times he had the running DDT counter to lets say Bret Hart has the second rope Elbow and Piledriver at times. Shawn Michaels don't think ever won with his top rope elbow. Mick Foley had two: The diving Elbow and the Pilling Piledriver
The tricky one is Bam Bam and Vader had several different moves that HAS finished but wasn't always the primary. And in some matches been used as setups.

Old School is even less succesfull than the chokeslam but it's still a defining move for Undertaker. Watching a guy that huge pull off a move like makes all the dumb supernatural shit seem more plausible somehow, like the person you're watching isn't quite real.

Dolph's pinned people with the Fameasser, albeit not often. Has he pinned people with his superkick? Has Roman Reigns ever won a match with the Superman punch? Yes, caught Kofi coming off the top with it once. Only one I can remember though. He also pinned someone with it after Ambrose held them up in a Hart Attack-like team up move.

Which shows how often he loses that you had no idea.

I also am not following WWE as closely as I once did, but yeah, that's not helping, either.

I remember Diesel's big boot signature move being actively discussed as a closer for his title match with Mabel on RAW in commentary by Vince McMahon and King during the build up to Summerslam.
