Survivor Series 87 Team Andre v. Team Hogan. I always laugh my ass off at the part where after Hogan eliminates Butch Reed and he’s high dfiving his teammates Andre enters the ring, but the ref claims Hogan tagged and makes him leave the ring só Ken Patera tells Hulk he’s got this under control then Andre brushes it away and tags back out. Heel Andre was such a dick during the Hogan feud.
Antônio Inoki v. Great Antonio. You can almost see Inoki’s meter slowly going red at Great Antonio’s shenanigans before he beats that ass. lol

Mankind vs Big Show from WrestleMania 15, since at the time Mankind was my #1 favorite wrestler and that was one of the only matches I had on home video with him in it.

Not in a good while, but - Rock vs. Kurt Angle, rematch for the WWF title on Raw in 01. That was the first time I remember realizing that one match could be better than other matches without any kind of gimmick or multi-man deal or anything. I didn't have the words to articulate it then, but I watched it and knew that it was good. I definitely wore out my VHS taping of it.
Mayumi Ozaki & Dynamite Kansai vs. Manami Toyota & Toshiyo Yamada, 2/3 falls, IIRC it was the second time that match had happened. Gets some disproportionate play for me due to being one of my go-tos for introducing people to wrestling, especially if they specifically prefer to start with women's wrestling.
Also haven't watched in a while, but LuFisto vs. Kellie Skater in Shimmer - just a quick little squash match after a promo, but oh man is it a satisfying Kellie Skater performance as well as a wonderful high-energy LuFisto showcase.
EDIT: How could I forget...the Florida Express vs. Do Fixer & Magnum Tokyo, All Hair/Masks vs. All Hair/Masks. AKA the single greatest comedy match of all time.

Not a match but I watch Chucky confronting Rick Steiner and Mean Gene on Nitro at least once a month. It NEVER gets old!

There was a period of about six months where I was watching Daniel Bryan v Dolph Ziggler from Bragging Rights 2010 several times a week. I could probably still recite all the commentary.

Genichiro Tenryu vs. Randy Savage in the Tokyo Dome, 1990. The heat from the crowds is off the charts. They’re just beating the hell out of each other. Sherri is going crazy as Macho’s coach, Tenryu is chopping him like a knife through butter and he’s daring Randy to come get some. It’s amazing.
Okada vs. Ishii at G1 Climax 26. Ishii breaks Okada from his usual game plan and bullies him around, so Okada’s forced to go to his extra gear.
Dunno when it was, but there’s this one match between Dynamite Kansai and Candy Okutsu, and it’s a great David vs. Goliath war.
Cena vs. Styles, Summerslam 2016. Two charismatic workhorses trying to top one another. It’s the wrestling equivalent of a DBZ “can you withstand this” episode.
