Not because of the name,just because raw beef is both pretty gross and just hard to eat--even if you tear off a tiny piece when you're cooking or whatever, you're gonna be chewing that for a long time. I can't imagine wanting a whole meal of that.

I'm no nutritionist, but most people cook meat for a reason. I can't fathom what kind of person outside maybe a werewolf who would eat that s*** raw.

I love a rare steak every now and then, but raw meat of any kind - especially hamburger - doesn't appeal to me at all, and that's even putting aside the risk of bacteria and tapeworms.

I make something the locals call "RAW DAWG" but it's basically Beef Tartare.
I rough chop a round roast. I add a lot of hot yellow onion. Salt, Pepper and Cayenne. Crack in a raw egg if it's too loose. Let it sit in the fridge for a day to "marry" and then people heap it onto saltine/ritz/club crackers. It's not slimey. It's not chewy. It's texture is like a party cheeseball.
It's great stuff. I frequently get asked to bring it for tailgate parties. I completely understand why some people don't eat it. I don't hold it against them. To each their own.
I don't make it with Supermarket Beef, and I wouldn't ever plan on it. I make it from beef roasts from a local locker, and I know the farmer that raises the cattle. Sourcing the meat is very important on a dish like this.

No, I wouldn't trust raw ground beef. I'll eat steak raw though. Most of the time when I marinate a steak, I'll hack off a piece and eat it before I cook it. Sometimes I make my steaks so rare they're still raw and cold in the middle. Ground beef seems to be asking for E. Coli.

I've had steak tartare a good few times. Kibbeh Nayyeh once. Seal tartare one.
The seal was the only once I found actively difficult to get through. It's hard to explain, it was just such fleshy flesh. I think it's rich in iron which might explain it.
Even still, I haven't eaten tartare type dishes with enough regularity to really develop a taste for it beyond being a culinary excursion.

I'd only eat one if I were the one preparing it from top to bottom, or it's from a renowned chef who knew what they were doing and staked their careers on making the best ones (ie someone who specialized in Beef Tartare). I'm not as adverse trying something at least once in life to say that I did, but with the inherent risks of raw ground meat being what they are, the preparation needs to be on point for me to consider ingesting it.

Depends on the mood I'm in.....sometimes you might get me in the mood to be adventurous with eating. Surprisingly has happened many times in my life and I've found several foods that I thought I wouldnt like, but I do.
