In something of a FAN tradition, I thought it would be perhaps interesting to see a counterpoint to the other thread.
Something I recently finished, I definitely felt the final part of Shantae And The Pirate's Curse was perhaps one of the most fun final parts of a game I ever played. First, there was the Pirate Master's castle which is perhaps the most challenging part in any Shantae game to date (at least until I get to the final part in the Seven Sirens game and see what that will hold for me). It is definitely a part where you must be very adapt at using your pirate skills to get through the various sections and I doubt anyone will go through that part of the game without losing a lot of life a few times. There was a bit of frustration mixed in but it never felt like the game was unfair to me, but that it was me doing a stupid mistake to set me back.
And the Pirate Master is definitely an awesomely designed and challenging boss where I liked the division into three parts where you get your skills acquired throughout the game stolen by him which he uses against you and you have to use your basic attack to defeat him (although you get a power up that lets you hit him with damage of -999 which just feels so good to beat him to a pulp).

Ultimecia's Castle is the best final dungeon ever, in my opinion. It looks cool, has great music, and it has that stipulation where you have to win back your abilities by defeating the bosses, adding a bit of strategy to the battles.
The battle with Ultimecia is great, too, even if you can just spam renzo for the win. Four different battles with three amazing tracks playing.

Metal gear rising. When I found out the final boss was the senator my first reaction was what? That one doofus that you saw for 8 seconds.... Um ok game you were doing so well... Then wham he slaps you across the room and turns out to be so damn tough all while awesome music is blasting my eardrums away. What a memorable last boss for me

Nemesis in the Verdant Wind route of Fire Emblem: Three Houses. The soundtrack alone makes this fight awesome.
NYX in Persona 3. Once again, the music is awesome and makes the fight even more epic.

The final battles in Shining Force II. First fighting off a possessed King Galam and his demon army. If you survive that, after some more plot you fight the final baddie, Zeon himself. Never could get through both battles and not Egressing away to resurrect without grinding levels on my 3 Master Monks.
Also, the secret battle at the end against every major boss is brutal but fun.

Ganondorf/Ganon in Ocarina of Time. I still think it holds as the most epic fight in a video game.

Not really the final boss as he was the second-to-last, but Shiva in Streets of Rage 2. While tough to beat, he was just so badass. Just make sure you avoid being grabbed or the dreaded Final Crash.

The Black Gate Battle in RoTK on PS2/Xbox was one of the most nail biting and epic levels ever, unless you were overpowered by the time you got to it.

The whole ending sequence of Persona 5 Royal was an emotional ride and I loved every minute of it.
Shadow Hearts 2 had a really good final boss.
I mentioned this in the other thread, but I think Final Fantasy XIV had some incredible endgame and final boss sequences.

Sephiroth in Final Fantasy 7. It took me 35 days to get to him, and I finally beat him on my 6th attempt.

Final Fantasy 6: The three pronged assault on Kefka's Tower followed by the multi part battle against the mad god himself.
The only drawback is if you found and powered up all of your characters and had them learn all the spells in the game, the final fight is pretty much a cakewalk. Of course you could choose to not do any of that and make things all the more difficult which is pretty mind blowing for a console RPG from 1994.

You invade the boar guns blazing ,meet the final protagonist where you get to test all your modes and skills one on one in a test of wills.
Honestlu that description doesnt do justice bur it is absolute amazo

God of War (PS4) final boss was pretty good too after all the fights you had leading up to that point

The fight with the Mysterious Warrior in Double Dragon 2, particularly the part where you've done enough damage and suddenly end up fighting him in another room as this starts to play, complete with a slow motion greyscale combination when you land the last hit. Not bad for an 8-bit beat 'em up.
