The key trick to smoking a brisket, pork shoulder, chicken, turkey, lamb, human or ribs is to put some sausage links in the corner of the smoker and snack on the toasty, delicious and juicy treats while you cook the main dish.
My two favorites are maple breakfast links or Italian sausage.

Boneless pork loin is a go-to at my house. It's very difficult to f*** it up to the point of inedibility, and it's deliciously simple to do. Doesn't take all that long, either.

That is exactly what I ended up cooking. Was freaking great. However between this and the grill I don’t know if my wife is ever going to do the cooking again lol
