I think WWE 2002 was the most stacked roster.
They had the Attitude Era guys, all the top WCW stars, and the people from ECW they wanted, while still pushing young guys like Brock Lesnar.

I think AEW has the more interesting roster, just because their name are all pretty new to me, as I dont watch the 'indie' stuff they've come from.
WWE has the comfortable familiar and can still put on a great show, but their main event scene is stale and I'm bored of seeing most of their talent. AEW doesnt have that, by and large (still a few over exposed people on the show though). But, that depth still gives WWE the edge, and it's a pretty bit edge at that. AEW just feels fresher, which helps it feel better than it actually is.
As others have said, WWE's female talent pool is likely the best in the world for ability, diversity and styles, even if they dont always do the best by it.

If Punk, Danielson and Cole come along. Yup. For me, it’ll without a doubt be one of my favorite rosters ever.
Look at it right now. Just the male side.
Main Eventers Kenny Omega Miro Young Bucks Adam Page Andrade Idolo Chris Jericho Cody Rhodes Mox Darby Allin Malakai Black MJF Orange Cassidy PAC Sammy Guevara
Mid Card Penta Fenix Proud & Powerful Jungle Boy Eddie Kingston Angelico Brian Cage FTR Christian Cage Dustin Rhodes Ethan Page Scorpio Sky Kazarian Hager Matt Hardy Lance Archer Wardlow John Silver Luchasaurus Hobbs Ricky Starks Stu Grayson Sting Blade Butcher Trent
Lower card Lee Johnson 10 Matt Sydal Kip Sabian Aaron Solo Peter Avalon Shawn Spears QT Nakazawa Shawn Dean Joey Janela Alan Angels Luther Alex Reynolds The Acclaimed Ogogo Gunn Club Brandon Cutler Brian PIllman JR Chuck Taylor Colt Cabana Dante Martin Darius Martin Evil Uno Griff Garrison Private Party Jack Evans Sonny Kiss Comorotto
Nobody get mad at who’s where, just my perception of things, but look at that. It’s notable to note how healthy the lower card is and how several can be slotted in the mid card and even some in the Main Event. That’s some attitude era level shit.
If you throw in Punk, Danielson and Cole?? Yeah. That’s about as perfect of a modern wrestling roster as it can get IMO. It’s some HCTP level shit and speaking of which, give me that game now.

Great roster, and that is not even counting the rosters of Impact, New Japan, AAA Mexico, and NWA, all of whom have working relationships with AEW!!

By itself, I think WWE has the edge over AEW in sheer quantity. But what helps AEW is that they have access to the rosters of at least four other companies as guest workers, including the top Japanese promotion and one of the top Mexican promotions.

To me, a roster is only as good as what you do with it. Therefore AEW wins by a mountainous margin.

Not yet, but once they get Punk and Bryan they will have a stronger main event roster than WWE, just because they cannot create stars and cut the legs off from under anyone that gets hot. WWE has the biggest and most talented roster in the world that is simply wasted. I would also say New Japan has a pretty strong roster in terms of the quality throughout, but it's not the biggest.
To me, it feels like WCW in 94/95, they are building a strong roster and you can tell they are on the way up, but not quite to their full potential yet. I wouldn't be surprised in 2 to 3 years if AEW is either right at or even beating WWE in the ratings. Much like when the NWO debuted and WWE became edgier with the Attitude Era, I think AEW will make wrestling "cool" again and accessible to the mainstream. As long as they don't do something stupid. The good part is they have been sustaining their fanbase and slowly building it, which is the right way to build a wrestling company.

You can certainly make that argument. I’d say since 2001 as even though Vince botched the Invasion, the roster was still stacked, but since then? AEW with Punk and Danielson added is up there.
