Who was your guy that when they joined the nWo you totally realized this gimmick had just run it's course and got watered down?
There's ALOT to choose from here.

Can I just nominate the entire nWo B-Team? I nominate the B-team theme. When you started hearing that song multiple times a night, you knew the shark had been jumped.

I think there is two timelines though. B-Team using the nWo main theme. B-Team using the nWo B-Team theme. They jumped the shark right there and then.

For me, The Giant and Bischoff was when it jumped the shark.
The Giant just lost the title to Hogan about 2 months before. He even threw him off a BUILDING.
And then Bischoff was against the nWo so it made no sense that he would align with the guys trying to kill the company.
There were worst members after this but this was the first time I said "Okay, this is getting stupid now"

Bischoff came along and nuked everything to hell.

If we're talking any nWo: Sting joining Wolfpac. He should have never joined ANY nWo IMO. If just talking black and white...well...:

This reminds me, how often did we get promos / vignettes of guys explaining why they joined the nWo?

Shock value.. I guess, but it just doesn't make any sense.

It makes sense to me when you consider that The Giant was in his early 20's at the time. They probably flashed some cool clothes, fancy cars and a lot of money at him and he decided that rolling with these guys is a lot better than hanging out with Jimmy Hart and The Dungeon of Doom.

And also, like, if you were them, wouldn't you want the destructive, young giant man standing by you instead of opposing you? I would. It's like the Chicago Bulls with Dennis Rodman. Instead of him being on the Pistons and beating the shit out of you, way better for him beating the shit out of everyone else for you.

He explained that after getting powerbombed by Nash, he decided it was better to join the growing force than be run over by it

This reminds me, how often did we get promos / vignettes of guys explaining why they joined the nWo? Some of them did, but for others like Big Bubba/Scott Norton just randomly sided with the nWo during a big brawl on Nitro in late 96 and that was it.

Not one in particular, but when Bischoff announced that they were having a ‘with us or against us’ membership drive. Before that, you had the headliner in Hogan, the tag team of Hall and Nash, the enforcer in Giant, the money and power with Dibiase and Bischoff, and even their own crooked ref in Nick Patrick. That was all they really needed to look like an unstoppable faction. But then they opened the floodgates and sacrificed quality for the sake of quantity.
But if I had to pick one in particular, then probably Randy Savage, since that was the on that pissed me off most as a kid.

for me it was Luger and Sting. I know Luger made sense as he had been a decent heel in the past (even though the Wolfpak were basically faces), but Luger had no business there. Obviously, Sting should never have been part of the NWO at all.

Giant ruined the original formula, which was the appearance of the nWO being a club of influential guys who had been mega-stars for Vince. Syxx got that back on track a little, but it still felt weird to have guys in it who had never worked for the WWF.
Wallstreet and Big Bubba joining (even though they were formerly WWF) was where I went, "Oh, they're really just letting anyone into this group." Norton was where it just felt totally chaotic.

I see Giant joining as them thinking "this is as close as we're getting to having Andre in the nWo."
