I FINALLY started Cowboy Bebop the other day, because I heard it was amazing, and the English dub is the best ever. And, I'm going to be honest, I don't think the dub is that good. I'm sure it was considered really good back when it first aired, but it's not that good by today's standards.
Don't get me wrong, I like the voice acting from the main cast of Cowboy Bebop just fine. It’s the voice acting from the minor characters I’m iffy on. Like, in the second episode where Abdul Hakim enters a bar, and the bartender has a VERY stereotypical Asian accent.
I think the dub for Baccano is the best dub I've ever seen (heard?). I've only watched two episodes so far, but EVERY single performance in the dub is spectacular. It's like watching an old gangster movie.

Really I'm of the opinion that Cowboy Bebop itself is overrated and a lot of the love for it is being carried by the dub, especially Spike as a character who just going by the text is very flat. Rewatched it recently and I appreciated it a lot more seeing it now than I had in the past but the show still has never really wowed me.
That said, yeah, for shows of this time period it is kind of inevitable that while the main cast might be great the supporting cast usually isn't. Like as much as the original Evangelion dub kicks the hell out of the Netflix one, it still has a lot of wonky-sounding extras.

I don’t know if I ever considered Bebop “OMG it’s da GREATEST story evahhh” like some fans did even when I was first following it. IMO it’s still a fun watch and the feature film is among some of my favorite cartoons. Style wise there wasn’t really anything like it at the time when Toonami picked it up, certainly not among much of the anime being imported them.
I haven’t seen the John Cho show yet and I’m not sure if I should.

It is an ok dub. But I have never liked watching Dubbed anime. Back when I first got into anime in hte late 80s no one wanted dubs.
Notice how since Toonami started dubs are preferred.

Not really people still prefer Subs I can go either way. Dub voice acting has become really good so if it stands out I will go that route. Tho that only applies to Anime, if it is a foreign movie and they dubbed it, I am not watching it

I generally prefer dubs if only because they're easier to multitask with though there are exceptions.

But then once i ask them how they got into anime it is always " i saw DBZ and Sailor Moon on Cartoon Network." But I am so far outside the Anime community I might have bad data. Ever since I was a kid and watching Kung Fu theater on Saturdays after cartoons I hate it when the lips do not match the words. So no matter what I'm watching I prefer subs.

I'd say it's probably impossible to actually quantify but the most likely way it breaks down is probably more people watch dubbed shows but within dedicated anime communities subs are probably more popular.

For me it depends on the individual performance. If it’s One Piece I prefer sub, MHA I can go either way with, with DBZ I like the later dubs (Chris Ayres was probably my favorite Frieza).

One thing I've noticed is that anime with Western elements and themes tend to have good dubs, like Cowboy Bebop or Baccano.

The dub was great for its time. If anything it sticks out how good it was because Bebop's original Japanese VA was pretty lousy. An unusual situation even now much less in the late 90s. Though with how much Bebop is inspired by Western Animation it makes a certain amount of sense.
These days I prefer dubs in general. I've never been militant about it either way, but western voice acting has gotten better to the point where even if the Japanese VA is better, it's not by a massive margin. So the convenience wins out.

I prefer Dubs. I know that many will swear by subs. For me I prefer dubs because it allows me to watch the show. I feel like I might miss stuff because I'll be too focused on reading the subs.

Another dub fan. For older (pre-90s) anime, subs are preferrable (since most 70s-80s dubs can be hilariously bad, look at the dubbed versions of Transformers: Headmasters, comedy gold, but a terrible dub), but once dub acting got really good in the 90s, I prefer it for the most part.

Honestly I've never really had any problem with keeping track of things while watching subs but then I read crazy fast so that's probably part of it.

I watched anime dubbed by ADV Films and Funimation when I was younger. Could that be why I think the dub for Cowboy Bebop is overrated?

Cowboy Bebop is a show with a good dub, which got conflated with it being a good show.
I don't regret watching it, but the anime is just the visual equivalent of "in one ear, out the other" with me. Ask me what happened in an episode five minutes after watching, and I would not be able to recall anything specific.
