I'm going to go out on a limb and say some of the best Taker matches were 1991 jobber squashes.
Not because that was his best in-ring work, but because that's what really established what he was, with the no-selling, Michael Myers sit-up, the choke in the corner, putting people in body bags, etc., etc. - and Bobby Heenan's commentary on how he's "not human" was the cherry on top, while Paul Bearer really hammed it up on the outside.
Those were what established the legend of the Undertaker that he carried into much better matches with the likes of Bret and Foley.

vs Kane at WM 14. Great storyline with a great payoff.

I can't tell you how many times I watched Taker vs. Yoko from RR '94 and the aftermath when I was a teenager. Obviously not the best match but it really struck a chord with me.

If I can only pick one match then I have to go with HIAC against Mankind for the pure spectacle of it all. It’s just a horrific car crash of a match.
Lots of classic Taker matches over the years though and I agree with an earlier comment that some of the best were the Jobber squashes early on that really set up the Taker character.

I'd say the HIAC match with Shawn and the second one with Foley which I probably watched more due to the spectacle.

Angle vs Taker at No Way Out 2006 was every bit the belter you’d expect it to be. Edit: WWE have also posted the entire match to their Youtube. Came in to post this Literally didn't think Taker had had a great match since the 90s before I saw this

The charm is obviously in how over-the-top it is but it also has one of Taker’s most underrated awesome entrances: Paul Bearer is pushing the double-WIDE, double-DEEP casket to the ring in a spotlight with the implication that Taker’s in the casket…but then you see Taker following in the darkness, like the spectre of Death itself.

Angle vs Taker at No Way Out 2006 was every bit the belter you’d expect it to be. This is my pick. Phenomenal match. The triple threat with Angle & Rock at Vengeance 02 is fantastic as well. The triple threat is my favorite.

That random Raw where Taker faced RVD after having an awkward backstage moment with Flair where he forgot his lines.
Not really my favorite, but when am I going to have a chance to mention this again?

2002 when he was a heel on Raw, as was Flair as GM. It's on YouTube as "Undertaker Ric Flair Backstage Funny".
