Killing Eve had a good first series but the second was poor. It may have improved after series two but I’d already tapped and couldn’t be arsed to go back.
I don’t think the second series of True Detective deserves the hatred it gets, as I think it’s a perfectly watchable series but I won’t deny that the drop in quality from the first series was there to see.

Cardcaptors. They even dumped the awesome English theme song for season two, and they butchered the ending in the dub because they didn't allow romance. Wasn't a fan of the two movies either. One of those instances where the Manga is superior

Seconding How To Get Away With Murder, and also throwing in maybe Empire- though I liked quite a bit from the second season, it lost control of its soap opera narrative.

Orphan Black really didn’t know what to do with itself after its first season. Eventually series 5 kind of ended up just circling back to series 1 and somewhat overlooking the previous couple years.
Surprised to discover recently they’re resurrecting the franchise with Echoes.

Not going to be the case for everybody, since plenty of people love the later seasons, but Legend of Korra fits for me. None of the subsequent villains did as much for me as Amon did, and a lot of the details of the world were more charming for me early on, and so much of it gets shoved aside for a grander scale. Wasn't really my thing as much anymore.
Gundam 00 is probably near-universally in this boat. I think it may have been the first mainline Gundam series to have multiple seasons and not be one continuous show, so some learning curve is to be expected. Still, many prefer the original season a great deal. I think it's stronger than season 2, but that they are closer than many think they are, for me.
Iron Blooded Orphans, on the other hand... definitely loses a lot in its second season.

Dexter. Fourth season was the only.one that came close. And it gets a boost because of how bad the second and third were.
Star Trek Voyager IMO. Bucking the Star Trek trend. My reasoning is because Voyager had a unique premise of being stuck far from home, short on supplies, with a divided crew. First season explored some of this. After that it became just another TNG clone.

Hell On Wheels. Season 2 was good, but Season 3 was when it went off the tracks.

For Korra I think season 3 edges out season 1 for me, since the broader narrative of it is less dependent on characters making idiotic decisions to drive the plot and there's not all the love triangle stuff and Probending dragging it down, but season 1 is certainly a lot better than seasons 2 and 4.

Sliders, season two is OK, but the ridiculous gimmicks (mystics and Kromaggs) started there also. That show never got a clear break despite being so far ahead of the curve with a concept that makes movies billions today.

BBC Sherlock. The second season was okay but didn't match the first season, IMO. And as soon as they killed Moriarity it completely fell off the tracks and was nowhere near as clever as it thought.
In a way, Game of Thrones, as well. It still had highlights in later seasons that mainly came from the twists and turns of the plot (how could the Red Wedding be anything but fantastic, even with Coldplay involved) but the overall quality dipped after S1, IMO.

Gilmore Girls. The show was at it's best when they focussed on Lorelei, Rory, Emily, and Richard interacting and attempting to understand each other, and the first season is where that conceit is freshest and thus strongest.

LOST really sucked me in for the first season but already by season's end I was starting to notice that it was going to be an "all questions no answers" sort of thing.

Little Britain, full stop. It was still fresh (for TV) and had more variety. By season 2, they cut a lot of characters, and took full refuge in lowbrow humor and catchphrases/never changing routines.
Personal opinions...but I liked Friends S1 the best, then just got uninterested by S3. (In retrospect I know I was watching it to seem cool with my classmates) Once Upon A Time had ups and downs after, but S1 was the best IMO, as the "learn which character was which fairy tale character" angle was in place, they didn't only focus on a core group of the regulars as they would later, and the Rumple/Curse of the Season thing wasn't hackneyed yet.
Not that it was ever great shakes looking back, but Captain N. Gameboy joining was a Scrappy moment.
It didn't get AWFUL after S1 at first, but American Housewife had the best eps its first season. Little things like Viv not being a regular character anymore, then the bigger things like the Meg Donnelly music promotions and the cast overhaul last season, made subsequent seasons less interesting.

Yeah, I figured after you said sets, but did have to make that note about TAS. Though the thing with Season 3 is most of the budget seemed to be put into making Batgirl prominent enough to get her own spin-off (I mean, she had her own theme early on). Didn't work but at least she became a comic staple. yes, they went from two parters "same bat time, same bat channel" to one half hour shows with "coming next episode...." villain teases at the end of the episode. They got rid of the wayne manor living set and aunt harriet (she appeared twice in season three as a "...oh there you are!" cameo), the music was different in the third season. They were teasing bruce wayne and barbara gordon dating, dick greyson could drive starting at that point. The story that I always heard was they cancelled the show, and then tore down the batcave set before they could get season 4 signed with another network, so when another network wanted the show, the set was already torn down and they didn't want the expense of rebuilding it. And I remember people asking where did barbara gordon get all of the batgirl stuff from. Bruce wayne was a millionaire expert scientist who could just buy and build all of his own batman stuff. Where was barbara getting all of her stuff from Dammit, CMWaters beat me to the Bruce Timm jab. Barbara probably got all her stuff from the same place Ann Marie got all her clothes in That Girl, despite not having a steady job.

For All Mankind (the what if the Russians beat us to the moon show on Apple+)
The further the show gets from its original historical divergence the sillier it had gotten. And it’s always had a soap opera-y element to it but that aspect of it just got so bad.
Maybe season 4 will buck the trend but each season has been worse than the last.

"Community" never came close to being as good as it was in the first season.
Season two was fine but you could start seeing the fissures.
In season three, those fissures became cracks.
By season four, the whole dam broke, continuing into that ghastly fifth season and a sixth season that was so bad, it almost singlehandedly killed Yahoo Screen.
