Law and Order/NCIS/Bones/etc because in the first 20 seconds you know who is either doing the crime or getting assaulted/raped/murdered. You can also add Columbo to that list as the culprit of the week was almost always played by a named actor. 60's Batman also made good use of special guests as either members of the rogues gallery (Or window cameos as Batman and Robin ascend up the side of a building.) Murder, She Wrote did it much the same way as Columbo, though moreso with Columbo since the structure meant we knew who the killer was, so it'd usually be the one who'd get the most time with Peter Falk. Murder, She Wrote occasionally had famous red herrings by contrast.

The Star Trek series have been great over the years, with guys like Iggy Pop under prosthetics as just another cast member. Stephen Hawking as himself was a great one.

Doctor Who has had some brilliant and terrible ones through the years. One recent highlight was casting Alan Cumming as a very bi take on King James I, but then a decade back there were somehow more than one terrible episodes starring James Corden.
