I'm not talking Chuck Cunningham or Judy Winslow.
I mean more like guest characters who show up for multiple ep story but never officially written off or brought back.
I'm watching Burn notice right now and I see Professor Slater from Community.
She was a big part of Season 1 and there for the season finale. Had absolutely nothing to do with the rest of the series and not explained what happened to her in the season premiere. This series is big on continuity and call backs and making sure every small detail is referenced. It's weird her and Vaughn never return nor are mentioned.
Big Bang theory. Leonard dates a dr. Goes to the trouble of stealing her from Howard. She freaks out of Penny. They move in together. Leonard freaks out, debates whether or not to move out. She asks him to have sex and he chickens out and goes back to her apartment. She's never mentioned again. At least with Priya, he broke up with her over Skype and the actress showed up to do that 2 minute scene.

Not the same thing, but I remember in that obnoxious Peter Jackson version of King Kong, there was a character named Jimmy that they put a lot of focus on, up to including making sure he was safe as other people were dying on Skull Island. His character isn't even around in the third act

Half the town in Silver Bullet. One of the damndest things. First half of the movie spends so much time with the townspeople.…and they not only don’t factor into the climax…they mostly just vanish halfway through. That and the odd choice to have a narrator who isn’t even the main character are just weird choices. Of course, King wrote that script and he was at the peak of his drunken drugged out period. So it actually came out pretty good all things considered.

Probably the most infamous example is Ben Gellar in Friends. He stops showing up at a later point in the series, and by the time Ben's half-sister is born his father, aunt, and grandfather seem to have forgotten he ever existed, and he's never mentioner again.
Also, Dr. Pulaski in Star Trek: TNG. Shows up to replace Beverly Crusher, stays for one season and leaves without trace, never getting another mention until a ship named in her memory appears in the series finale of Star Trek: Picard.

Brother Mouzone was very important and memorable in The Wire but was only in a few episodes and then wasn't seen again. Not sure he counts though as his part of the story was complete but you'd just expect him to pop up again.

On Fresh Prince, Will's mom marries Lisa's dad Fred in the season 5 finale. When she appears in the following season's Thanksgiving episode, Fred isn't there, nor is he mentioned

Speaking of Burn Notice, we have Sugar, Michael's friendly neighborhood drug dealer. He was a recurring character throughout most of the series, but when we last see him in season six he's being captured and tortured by a corrupt CIA Agent in hopes he might have information on where Michael is. He does not resurface in season seven and we never find out what happened to him. For its first two and a half to three seasons The Commish had a bunch of minor reccurring characters floating around the police station - Carmella, Caruso, Papadakis, Rose, Gordy, Lucille the Secretary, Freddie the Handyman - and by the start of season four they've all disappeared without explanation. The most egregious example was probably Rachel's Brother Arnie, who was squatting with the Scali's through the first half of season one. They wrote him out effectively enough, but he's never mentioned or seen again after season one, not even at his own Father's funeral in season four. Not the same thing, but I remember in that obnoxious Peter Jackson version of King Kong, there was a character named Jimmy that they put a lot of focus on, up to including making sure he was safe as other people were dying on Skull Island. His character isn't even around in the third act That's one of my biggest problems with that version of King Kong (besides its unbearable length). Peter Jackson spent so much time giving almost every crew member of the Venture focus and depth and characterization, and it all just feels wasted because they're all long gone from the movie by the time it reaches its climax in NYC with no real resolution to any of their individual story arcs.

Dexter in Season 6 introduced Lewis, a character that was a video game designer obsessed with Dexter and seemingly knew more about him than he led on. All throughout that season Dexter does all he can to rid of him, only to get his wrath in Season 7.
Only to get whacked by misunderstanding and deus ex machina by the mob.

Fringe season 2 introduced a new character, FBI Agent Jessup, played by former actress and current Duchess Meghan Markle. At the start of episode 1, she butts heads with the Fringe team and questions their authority, but they eventually start to work together and the team lets her in on some of their secrets. Episode 2 reveals that she is deeply religious, and the episode ends with Jessup reviewing the events of past Fringe cases and comparing them to events in the Bible.
And then she is never seen again.

While she was used pretty extensively in the novels and had a major role (and conclusion to her story) in Star Trek Online, in canon she's just never heard from again post-"Unification II".

Speaking of big bang theory, this almost applies to Bernadette.
She had a couple episode long romance with Howard and one day he was single again and back to his pervy ways. At least Raj asked once and he casually said they broke up. Thankfully they brought her back with explanation with what happened
