Honestly, most of the changes made to 'The Hunchback of Notre Dame' worked out much better than a straight adaptation (granted, you absolutely cannot do a kid-friendly adaptation of 'Hunchback' without changing stuff). Giving Quasimodo the gargoyles to interact with so he gets some better characterization, making Frollo less sympathetic and more of a flat out villain, aging up Esmeralda and making Phoebus a more noble character rather than a lecherous adulterer, and of course, not having Esmeralda and Quasimodo die at the end of the movie. You know, without looking it up that makes me think...both Hunchback and BATB were set in France...how far apart time wise were they? If close enough, I could imagine the events of Disney's BATB happening at the same time as Disney's Hunchback. Or hell, they could fudge the time around a bit. The TV Series for Hercules, a midquel, apparently happened after the end of the Aladdin franchise, which wouldn't work in real world history.

Gaston being an entirely original character, he became the most memorable part of the movie, and one of the best Disney villains in general.
King Louie, likewise, was not in the original Jungle Book, but is now regarded as much of a part of the story as Mowgli and Baloo.

In the original Sleeping Beauty stories, the prince/king that finds Beauty asleep goes quite a bit further than just kissing her and she ends up pregnant. In fact, it is the twin babies looking for milk that suck the splinter out of Beauty's finger and finally wake her up.
There is also an evil queen later in the story that wants to cook and eat Beauty and her twins, but the queen's plan gets discovered, so they cook and eat the queen instead.
Disney removing the rape and cannibalism was probably for the best, I think.

During the course of Disney's timeline with their various animated works, there has been some notes or criticisms about how they would change the classic stories around (sometimes not taking into account how many times said stories had been modified over the centuries anyway). Even ignoring when these movies became major successes and probably changed a lot of public perceptions of how these stories went in the first place,, sometimes in the long run they are just better than the original general story. When do you think stuff like that happened. After watching a few Phelous videos on "Beauty and the Beast" adaptations, I'd say the Disney one helped to streamline things (remove the extra siblings for the titular beauty...and for that matter give her a name besides "Beauty" like many have done before, make the father not seem like a moocher and thief, more time building the relationship of the title characters) to make it overall a better told story than the other versions. Might also mention the Snow Queen thing leading to Frozen, but that more turned a villain into a brief anti-hero type character I'd say.
