Not including debuts, but it always feels like AEW is fairly predictable on what is going to happen. Dynamite is always a fun watch, but it's rarely been a "must watch" if that makes sense.

Andretti over Jericho was a shocker.
Like half the crazy spots Sting has done in televised matches
I think AEW TV has a lot of fun and unexpected stuff, even if the stories themselves tend to be somewhat predictable.

The entire Adam Cole and MJF Storyline has been both a surprise and completely unpredictable from the jump.

Frankly I think AEW usually being steady and 'predictable' is a good thing, because it means the shock moments come at times that actually make for interesting TV, rather than just being surprises all the time for the sake of it. A well told story often will follow predictable paths because making use of interesting stories is about using methods and blocks that often signal the directions going. Wrestling has its stock tropes for a reason. By usually being something you can follow decently easily, the surprises are more meaningful because you aren't expecting them.

Brian Cage beat Hangman Adam Page clean in their first ever matchup on Dynamite. Not just clean, but he trounced him. Hangman would get the win back and start his road to his world title at Double or Nothing 2021, the first AEW PPV with a full crowd back.
It has eventually lead to the rubber match happening this very Wednesday, a shock victory they've let simmer for over two years.

Orange Cassidy defeating Jericho in their first one on one encounter
Brodie Lee wiping the floor with Cody in like 5 minutes to win the TNT title
The Pinnacle's formation at the end of an episode of Dynamite where they laid out the Inner Circle
Sammy beating Miro for the TNT title
Great Muta coming out to save Sting and then team with him against the HoB
Saraya's debut at Grand Slam
Hook defeating Starks for the FTW title and then Hobbs turning on him
Danhausen's debut
The Bucks winning the tag titles off Jurassic Express (i know it was an audible but still)
Plus all the other stuff mentioned. I'm probably forgetting loads too.

The greatest orator of his generation decided he needed Ace Steel to help his act so he randomly showed up one day.
Ace Steel decided the best way to help was to use the forbidden swear words on live TV.
He was never heard from again.
The end.

Yeah, they announced they're running f***ing Wembley Stadium when everyone thought they'd be announcing Craven Cottage, I don't think there's a single person watching who was honestly expecting that. There's plenty of other examples that others have covered too and I'm sure plenty they haven't.
Honestly the whole thing is made a bit moot anyway by saying "excluding debut's", Dynamite is a show that surprises me all the time because people turn up out of nowhere pretty regularly, at the end of an episode where there's been a surprise debut or appearance I don't think to myself "yeah but nothing ELSE surprised me". In terms of just the matches often being predictable in terms of the result, eh, they don't really do 50-50 booking and they keep lots of guys strong for when they do PPVs so that's the price you kind of have to pay.

aew surprises me all the time, there isn’t as many huge shocking wtf moments because they don’t prioritize moments that don’t end up making any sense
when you do that, you do lose some potential excitement but the storylines end up way steadier and less insulting

My favourite suprise and maybe favourite moment of tv this year was when the Elite backed up Hangman. It was a really well done moment, I wasn't expecting it and the roar of the crowd when it happened was epic. It was such a simple moment yet very memorable
