I love hard games but not hard modes. Most hard modes are too cheap and aren't hard by design but by adding extra enemies or making them bullet sponges etc. No real balance or thought although there are exceptions.
Something like Spelunky is built to be difficult so there's fairness and logic to it. 97% of the time it's my fault I died.
The other approach is having the hardest things be extras post the main ending.

I only play on Normal. If there's an option to do it and a section is too tough after several tries, I'll switch it to easy mode. However, if a game is too tough even on Easy, I'll just quit altogether.
I'm 40 and have limited time to play games, so I have no patience to "git gud".

Not all hard modes are created equal. Sometimes they are good, and sometimes they are pretty tedious.
I guess the closest I tend to do to it is using sub-optimal builds in RPGs because it's just what I want to use.

Depends on the game, really. Games I've never played before, I start at Normal, and depending on challenge/frustration level, I change it.
If it's a game I'm good at, and enjoy playing, I choose a higher difficulty for extra challenge.

I figure 'Normal' is how the developers meant for the game to be, so I usually just start there. But if there is an 'enjoy the story' option, I might check that out as well.
I play Souls games not because they are hard, but because I genuinely enjoy the worlds that are created.

If it's a game that I'm playing primarily for the story, then I will never play the most difficult mode (with the exception of having beaten the Baldur's Gate I and II Remasters on LoB just because I love those games).
If it's a game that I am playing specifically for the challenge, then I'll do it if I enjoy the game enough. Cuphead being the biggest example for me.

I always start out on the default mode, which is usually normal. I love playing RPGs but much prefer turn based combat, so I often switch to easy if it's action based and I don't like how it plays.

I pretty much only play hard modes if they're creative about it. Stuff like Real Survival in the RE remake for instance changes how you play the game, and Fallout 4 Survival mode makes the game surprisingly immersive.
Most of the time though hard mode seems to be "enemies have more hp and can one-hit you".

I start on Default/Normal on my first play because while a challenge can be fun, first and foremost I want to enjoy a game and not want to throw my controller at the wall

Most of the time though hard mode seems to be "enemies have more hp and can one-hit you". Heaven or Hell mode in some of the Devil May Cry games is an interesting take on a hard difficulty. Everything dies in one hit: Dante, the enemies, even bosses. It becomes so much more about creatively avoiding the hazards and traps in the levels while always ensuring you get off the first attack against the baddies.

I have been playing a lot of From Software games lately. They have a reputation for being hard, but I prefer to think of them as challenging and strategic. Funny enough, thereâs a lot of players that try to make the games more challenging by ignoring things that help. The Reddit threads dedicated to these games are littered with posts of people showing videos from their latest challenge runs. When I see videos from people on SL1 (no leveling ever), no rolls (rolling is an effective way to dodge attacks), no blocking, no parrying, no hits taken, bare fists only beating bosses I struggle with it just is striking to me.

You should probably only be "required" to play on the hardest difficulty if you're streaming and your audience is expecting expert gameplay out of you.

I play normal on basically everything.
Even on normal most games I play will have at least one annoying bit that takes a bunch of tries and repeating material just is not fun for me.
I have one exception which is Fallout New Vegas, a game I have played so many times and love so much that increasing the difficulties can add some freshness. I have done it twice on hardcore mode, which is very funny on Dead Money because even the air outdoors poisons you constantly, and my current lazy playthrough I just have it on hard mode to make the combat trickier.
Outside of that, challenge is just not what I play games for.

Usually stick to normal, unless I really enjoy the game then I might go back and try it again on hard/expert what have you.

depends if hard difficulties are actually fair.
e.g. I proudly own a Death Wish mask in Payday 2, but even then some heists like the Goat Simulator heist can go away.

I sometimes play hard mode just to experience how things go and whether I like it or not.
I do remember my first experience of playing a game on the highest difficulty was MegaMan X6's Xtreme mode. That gave me both good and bad memories, I'll tell you what.

Another hard difficulty I respect is the Halo series (at least the Bungie-developed ones; can't speak about the 343 ones). Because it doesn't turn the enemies into bullet sponges, but makes them a hell of a lot smarter without it feeling cheap. I respect that.

I prefer starting out on Normal if it's a series I'm familiar with.
If it's my first time playing a certain game in a series, then Easy, before gradually adjusting it to Normal when I get used to the gameplay.
