Now that I look at it, most of his manian matches werent that entertaining Yep, pretty much. His WM streak is soooo ovverated IMO. Just like all of Brock Lesners stuff is.

VS Diesel
I loved the Match. Diesel/Nash is one of my favorite wrestlers ever and He gave Taker a good beating while keeping takers win streak in tact.

I actually love his first WM VII appearance vs. Snuka. I love it when Snuka missed the flying bodypress and landed awkwardly against the ropes only to have 'Taker tombstone him back to reality. Paul Bearer was also very thin in this appearance compared to the later years. MacCulley Caulkin was seen in "awe" of the 'Taker, also.
However, I think his best overall performance was vs. HHH at X-Seven. I thought this was a great match; back and forth and the crowd was really into it. I legitimately didn't know who was going to win.
The X-8 match vs. Flair was good, but too much of a beatdown by 'Taker on Flair.

Even though i didn't like the Flair Taker match, i have to admit the commentary from JR & King was hilarious...
JR: "FLAIR'S BLEEDING LIKE A STUFFED PIG BAH GAWD!! King: "That's a nasty gash on the face of THe Undertaker" JR: "Are you drunk?"

I'll go with Taker/Kane. A very fast-paced big man match, and although Taker wins, you get the feeling it was a hard-fought battle, making Kane look good.
And like Zynk said, the build-up was awesome, unlike any other match before or since.

Taker/Trips. Both were on that night and it is the only one I remember where I though Taker would lose.

might not be the most "intense or techincal" or all that good stuff but dammit it was greatness! Still was a great match
