I'm gonna go out on a limb here and say Savage/Steamboat.
That match was so awesome words can't even describe it. So it's always gonna be underrated in my eyes.

The Rockers v the Orient Express WM6 - good match
I also think that Piper v Bret at WM8 never gets the credit that it deserves, everyone says it is a good match but never mention it whenever the "best ever WM match" polls come around. I think it was THAT good.
Austin v Scot Hall WM18 - I really liked this match - especially the double stunner selling from Razor chico.
British Bulldogs v The Dream Team WM2 - outstanding match and only good match on the card that night
Jake Roberts v Ted Dibiase WM6 - alot of people think this match was a let down, but I enjoyed it.
John Cena v Triple H WM22 - I thought this was a good match, I think it gets a big slagging more due to the outcome than anything else
Kurt Angle v Eddie Guerrero WM20 - Again this is always held in regard - but never mentioned when the best matches polls come around. Fantastic match and outstanding finish.
There are more but I am done for now.

Savage Vs steamboat wrestlemania 3 - the best match on the card (forget hogan v Andre which lasted 8 mins including entrances!)
sid vs taker wrestlemania 13 - highly underrated, two of the biggest an baddest in the same ring!
Ahmed + LOD vs Nation of domination street fight - wrestlemania 13 - it was just really funny i mean a match with a kitchen sink, come on people!

Hogan vs King Kong Bundy at WM2
Apart from the crap commentary from the vampire lady, I thought this was a real good Mania main event. It's nothing fancy, just a good ol' brawl, and the steel cage adds a Wrestlemania-style novelty to it.

The Hardcore Battle Royale at Wrestlemania 16(refuse to cal WM 2000) I too refuse to call It Wrestlemania 2000 as well. What's going to happen in 1,977 years from now when they have the 2000th Wrestlemania? They can't call It Wrestlemania 2000, that name's already taken, unless ofcourse we don't acknowlege It.

Anything with the Can-Am Connection. Or just Martel for that matter. But to get away from my Rick Martel fetish, I'll go with... DiBiase Vs. Roberts and Hercules Vs. 'Quake from WM 6 Owen Hart Vs. Skinner from WM 8 Shawn Michaels Vs. Tatanka and Steiners Vs. Head Shrinkers from WM 9 That's all. For now. Yes?

I think it was THAT good. I just watched that match about a week ago and I have to agree with you there. (I was actually going to post that match as my pick) That match was fantasic, and it reminded me how good Piper was when he was on his A game. Ive heard people tell me Bret carried him there, and that's a bunch of bullcrap IMO. Everything about that match from the actual wrestling, to the psychology (Piper's near heel turn during the course of the match) to the announce team, and the white hot crowd just made it special.

I agree with Hart/Piper.
I also thought Flair/Savage was better than any Hulk Hogan match.

Piper/Goldust from WrestleMania XII is underrated as hell. That was a great brawl. You beat me to it. I loved that match. I also loved the Savage/Crush falls count anywhere streetfight. I also like the Kane vs. Raven. vs. Steve Blackman hardcore match. You know, Hogan/Savage and Hogan/Warrior get all the glory, but Hogan/Slaughter was pretty damn good too.

Colossal Connection vs Demolition, simply because Haku was in for the entire match (Andre was beyond paying at that point). He held his own vs both guys and it was still entertaining.

Savage/Flair - Mania 8 was Actually not too bad despite being the World Title Match in the Middle of the Card. Extremely Underrated.

Raven vs. Big Show vs. Kane, WM 17. Fun match, really awesome to see Raven on the same level as those two.
Stone Cold vs. Hall, WM 18.

I thought Michaels/JerichoWM19 was a 4 1/2 star match easy. Probably the best HBK match since his comeback. I think it's the best match at WM19. Ahh, you beat me too it . Thats my vote HBK/Jericho was a really good match.

I also think that Free 4 All 15 minute time limit when the Hardcore title changed hands all those times was really great.

flair and savage is amazing not only for the match itself, but the feud itself, as well as the promos that were cut after it
