Two of my personal favorites...
December 27, 2004 - Beat the Clock I (all the guys in the upcoming Elimination Chamber match wrestle matches under BTC rules, but if anyone loses their match, the person they lost to takes their spot; Batista won in the fastest time, pissing off Triple H)
March 14, 2005 - Jake Roberts returns on the Highlight Reel and warns Orton not to get overconfident about wrestling Undertaker at Wrestlemania; featured Marty Janetty and HBK reforming the Rockers for one night only; featured Triple H vs. That Canadian Guy.

Both of those were real good. I remember HHH fought Shelton in that 'Beat The Clock' match and like all HHH vs underdog matches, they kept teasing that Shelton would win. It was still cool though and it meant alot more...

The 100th episode because they had a cake with black frosting and Macho Man shoved it in someones face (i forget who) and I remember being really mad because I kept thinking "WTF!??! BLACK ICING?!?! WTF Does that taste like?? Well, Ill find out as soon as it shows them eat a piec.......awww man stupid Macho Man threw it in their face! Now Ill never know what black icing taste like!" For some strange reason, I actually expected them to just sit there and eat cake on camera and talk about what it taste like. I guess I thought it would be some nasty tasting cake and they would all spit it out and hilarity would ensue Are you sure that wasn't the one year anniversary? Because on my calculations Savage would be gone by the 100th episode. featured Triple H vs. That Canadian Guy. Mike Awesome?

The Raw with the first round of the Goldrtush tournament. Shelton Benjamin vs. HBK where HBK picks off shelton in mid air with sweet chin music and ending the night with Triple H tapping out to Chris Benoit.

"...because this Invasion, just got taken..to the...EXTREME!" Yeah I know a lot of people weren't happy about ECW and WCW alliance at the end of the night. But for me there were so many twists, turns and swerves that night - it made it my favourite Raw. Still have it on tape. Seconded. That RAW was a like a months worth of storylines crammed into two hours. Glorious.

The one that REALLY happened the night after Mania 13, where Bret's heel turn was brought out full-circle and he stopped the Owen/Bulldog feud by reforming the Hart Foundation.
Also, Austin got owned, saying: "I never said 'I Quit', Bret! And you didn't make me bleed, either! You didn't bust me open, the steel railing did!"
Bret: "What're you talking about? I threw you into that rail!"
I'm also quite fond of Jannetty beating Michaels for the IC title, the greatest promo ever after the Bret/Sid Cage match and The Rocker Reunion...
EDIT: Wait, Owen and Bulldog's match was the following week. They defended the Tag titles that night. Hmm, I guess I just have my RAW moments, not entire episodes.

MSG Raw the night after King of the Ring 2001. It had Mike Awesome making his debut and running in and attacking Rhyno backstage after his match with Test and pinning him for the Hardcore title. The start of the APA's WWF locker room speeches. Shane and Booker at WWF New York. The first Austin, Angle, and Vince skits. (Vince: I know Kurt's a dork. But he's a dangerous dork....and he's our dork. Angle: Hey Steve.....have you tried the carrots?) Austin letting Angle tag along to WWF New York. Booker giving Vince the scissors kick at the end. I also loved the slap Vince gave Booker and then Booker's no sell reaction of it. Awesome. Then the WWF locker room chasing Shane and Booker away. Also on that night you had Big Show debut his Big Show, with the arrow pointing down shirt that Trish throught was pointing to his feet X-Pac beat Jeff Hardy for the Lightheavyweight title. As a lifelong X-Pac mark, I enjoyed that. Tajiri steped up to take on Jericho. Which was Regal's punishment to Jericho for the rumors that if Jericho or Benoit won the WWF title at KOTR, they would jump to WCW. Regal and Tajiri were gold together. Edge getting his KOTR trophey and being interupted by "Billy Bitchcakes" ;D DDP pulls hair out of Sara Undertaker's head. Just a fun night. I still have it on tape. I loved this episode too, especially seeing Mike Awesome blindsight Rhyno... However the best part was "Billy Bitchcakes". (Thats what I call someone who does nothing but bitch now.)

May 17, 1993 - RAW 1-2-3 Kid is born! I was literally shocked.
August 5, 1996 - RAW One of the best Battle Royal matches. Ahmed won and Ron Simmons debuted. Plus a whole lotta Sunny

This isn't my favorite Raw ever, but the first moment to pop in my head when when Vince and Flair were GMing and Austin and Booker T ended up in the supermarket and Austin just beat the crap out of him. I mark so hard to this day when I see it.
Vince: "Turn around Book! He's behind ya!" Flair: (laughing) "He can't hear you!"

that one during the early stages of the invasion where vince told austin that "we need the old stone cold", and basically just wants him to turn face again, and every now and then we see austi in a bar, contemplating his decision, before we cut to the main event and it looks like austin is still the coward he was before. however, towards the end, the alliance run in and give the wwf a pasting all over the building, until austin returns ad kicks the crap out of all of them, setting the stage for the invasion ppv.

Raw before WM13..
Bret vs. Sid steel cage for the title and Bret snaps post match which is the craziest ending to a Raw. and had me so excited for WM13.
