I've only ever seen it executed in a match a handful of times, but the Pentagram Choke is a thing of beauty. Very hard to get it locked in, but when it is there is absolutely no possible way to get out of it.
But for one that's quite common, I love when I see someone execute a Kimura/Americana. That's also one of those moves that when it gets locked in you have no choice but to tap or hope your arm is incredibly strong so it doesn't snap.

Even though it's extremely rare to see it, a Gogoplata is an awsome choke..
As far as more common moves, gotta go with a nicely executed armbar.
