MLBPA, baby. Nothing like throwing in your bench warming right fielder as your 7th relief pitcher or hitting a Grand Slam with Curt Schilling. Plus the "environment cheats" were great. icy fields, rubber fields with ground rule doubles a plenty, etc. Plus, you could prolong certain outs by having players run around the field or just keep throwing the ball to every base.

I think it was World Series baseball or something like that for the Sega Genesis.
Whatever the title was, it allowed you to have a draft for all the teams. I stacked the Rockies with a ton of hitters and pitchers.

Bases Loaded for NES.
That back-to-back combo of Paste and Bay on Jersey was unstoppable.

RBI 93 on Genesis, haven't really liked a baseball game since.

MVP Baseball 2005 for the PlayStation 2. This. Agreed. There's a terrific modding community for the PC version, with updates for the 2008 season (uniforms, rosters, stadiums, player faces, etc.). Haven't had to buy a new baseball game for the last 3 years. The PC version is so hard to find, that it goes for well over $75 used on eBay.

RBI '93, but now MLB Power Pros is making a strong contention to replace it.

MLB 2K5 for PS2 or RBI 3 for the nes I had the most fun playing.
I've been playing MLB 08 The Show on my PSP and I really don't like it.

MLB Power Pros for the Wii. There are a few things I'd change, but overall, it's pretty addictive.
