Same reason the WWF Superstars (and pretty much all the golden age WWF shows right up till around 94-95 time) as well as WCW Nitro (the original tapings and again most the WCW shows) were taped weeks (sometimes months) in advance and at the same time. Saves hundreds maybe even millions (depending on how many shows they were doing at the same time) of dollars. It does crate some problems though eg injuries and PPV tittle changes just to name a couple of things. That is the main reason (or one of) they stopped the weeks and months at a time tapings. Thats probably why the WWE has opted for duel tapings and not longer. Saves problems occurring. I think TNA does the same thing (tapes a few weeks in advance and at the same time) as well.

and may also give the wrestlers a bit more time off possibly.

Money and since it's around the holiday, gives everyone some well deserved time off to spend with their families. I think I read something about this in JR's blog, saying where this was long or short-term. Maybe someone else here remembers (wouldn't surprise me if it's long-term because they are cutting the budget a lot).

Yeah, I recall the figure being set at 700 thousand dollars, and that's before they even get into travel costs, I believe.
Also, it likely takes a little of the pressure of travel, unless they just do more house shows.
