Either Mario Kart racing (you could use sensor to give weapons and remote kill switches and vibration to mimic the hits) or Mario Bumper Kart.

Rides: Mario's mobbed up adventures through Little Italy Kirby's vortex Luigiland, where all sidekicks and younger brothers go to mope.
Costumes: Geno Peach Some random Sega/Sony character every hour who mopes and whines about how Nintendo "is far superior to the competition" ;D

Falcon Flyers : Jump in one of the F-Zero race cars and travel at high speeds around the Big Blue rollarcoaster.
DK Mountain's Barrel Ride: Take down the river of DK Jungle's in one of Funky's specially made barrel rafts. Watch DK and Diddy face King K.Rool, but watch out, you WILL get wet.
Pokemon - Gotta Snap Em All: Jump in the Zero-One around the Safari Zone. With the guidance of Prof Oak, just how many pokemon can you see. Just don't wake Charizard!
Pikmin Playground - Suddenly, you have shrunk to the size of a coin. Travel around the large maze along with Olimar, Louie and the Pikmin and marvel at the world when you're only a few mm high.
Bounty Hunting with Samus: Jump in Samus's ship with a friend, grab a gun and start to fight off the Space Pirates and the Metroids. Can you beat Samus's score?

The SSB:Brawl Experience - It's basically a roller coaster, but when it goes "ON the train LINE" it just stops and stalls and about 10 seconds into it you get a message saying that you hve been disconnected from the rollercoaster.

I would want to see Alex and Ryan from River City Ransom as costumed characters. So long as they're not toweling themselves off. ...and they sould definitely have Merv's in the food district, where you could order up Merv Burgers, Merv Fries, Merv Melts, etc. and of course... a smile for free. Even if like maybe 5% of the people who went would get it. As for rides... Mario Kart bumper cars is a must, unless they went all out with a Mario Kart kart racing track... although, I think people would be tempted to bump into each other. Oh, a carousel with various colors of Yoshis is a must. And a pole climbing challenge would be fun (with safety nets and stuff) where you gotta climb that giant green pole to get the flag.
