The single player aspect hasn't changed much. It's still you winning 8 badges and challenging the elite 4 for all games.
Competitive battling is very fun if you get into it. You'll learn that these "kiddie" games have an incredible amount of depth.
There are more types and moves. Diamond/Pearl introduced the physical/special damage split for attacks. This means that pokemon like Sneasel/Weavile aren't useless like before.
There are also these things called "contests," but I can only inform you of their existence because I still have no idea what the hell the purpose of them is or how to do them.

Eh, it's different people's opinions really. Mine is that it's a fun little distraction for a few minutes while your in the can. I just collect myself, I dont train seriously as I used to.

It's good times, I think.
I haven't played seriously since Gold & Silver, but I've played bits and pieces of all the new ones and they are really entertaining. I'm intending to pick up Platinum at some point.
In any case, they can be fun little distractions, or if you wanna take it more seriously, you can build up entire well-thought-out teams and train them all perfectly and whatever.
It's really however you wanna approach the games. I think the collecting aspect is a lot of fun, personally.
Not to mention, it's a really great entry-level RPG that veterans can actually appreciate too. I'd been playing RPGs for years when the Pokemon games came out, but I've still loved them since.
