These type of things seem to happen in Madden games all the time. I remember playing one of the old games in season mode and I was going up against The Cowboys. On 5 different occasions, one of their receivers would miss a pass and go to the ground. The defender would be standing there still and the receiver would get up and run into the defender, falling down and doing the crappie flop ... and I'd get flagged for a personal foul and 15 yard penalty each time.
And that year The Cowboys were the only team I couldn't run a fake punt or pass against, because the few times I'd call one, they would suddenly audible into the right defense. And that was back when the AI was really crappy ...
So I squeaked by that game and didn't have to play them again until the playoffs ... where the game went into overtime when they hit a 58 yard field goal with time expiring ...

It seriously moved like half an inch on the screen because the game had "decided" that he was catching the ball. That's the point. Why did the game "decide" that it was a touchdown when the ball was right in front of the defender? A correctly made AI would've "decided" that there was an interception. Hence why we are indeed in a blatant case of Rubberband AI.
