I don't mean house shows or just random TV tapings, I mean more stuff that actually gets remembered - PPVs, particularly well-known shows, that sort of thing.
I've only been to three shows myself - one was a random house show. Could go to more, but up until I went to this one I always figured house shows would be a huge waste of time. Enjoyed it, though.
Other two were notable, though. The first was Invasion - yeah, I was there. Nosebleed section, but I was there. Bought a foam Smoking Skull Belt there that I still have to this day - didn't even like Austin back in the day, just liked the belt's design.
Other one was the 6/6/06 SmackDown taping, notable for being the taping of last ever Velocity as well as the return of Mr. Kennedy from his first of 40 million injuries.

I went to the one where Kane came back with his new mask, and Lesnar left RAW for SD.
Then I went to a house show where Owen crotched himself on the top rope for no apparent reason.

Survivor Series 2002. Solid show from top to bottom, one of my favorite PPV's. Lesnar loses his first match & WWE title, the first ever Elimination Chamber match, Dudley Boys return, Scott Steiner's WWE debut as Big Poppa Pump.

Foley's first title win
Foley's "retirement" Hell in a cell with HHH
one of the DX reunions when X-Pac and the Outlaws were still there. (no HBK though)

New Year's Revolution 2006. I saw the beginning of the Rated R Era. I was also at a Raw where Sid powerbombed Jose Lothario's son in the locker room. Not sure which one I look back on with more fondness.

I was at Raw where the necrophilia segment was shown. That sure beats Judgment Day 03 when Taker beat Hogan to win the Undisputed Championship

Survivor Series 96', When Sid won the belt.
KOTR 2001, King Edge/Booker T's WWE debut.
Royal Rumble 08, Cena's return.
I was at the RAW where they merged the IC and Hardcore belt and The Smackdown that had the Al Wilson funeral.
I've also been to plenty more shows, and I'll try to think if anything notable happened on them.

WrestleMania X-Seven- Awesome show. Nuff said.
No Mercy 2005- Eddie's final ppv, also his birthday. Batista brings out a cake and leads the audience in singing Happy Birthday to Eddie after the ppv went off the air.
Raw house show, June 2007- Of course it wasn't televised, but it was still cool. Mike McGuirk is in the audience and does the announcing for one match. Hadn't been in a WWE ring since 1993.
Vengeance: Night of Champions 2007- Benoit no-shows. Nuff said.
WrestleMania XXV- The only thing I treasure about being at this Mania is seeing Steamboat return to action after 14 years and Michaels/Taker.

Austin winning the WWE Title at WM14. Foley/Flair I Quit at SummerSlam 06, also got to see Hogan for the first time and Sabu aswell, so that was cool to me. Oh and Edge beating Cena, that was awesome. Edge returning at Survivor Series 08

I was at the North Carolina RAW when HBK & DX brought out the Bret Hart midget. Truly the greatest night in the history of our great sport.

I was there when HBK shoved the Canadian flag up his nose. I never felt more patriotic than at that moment. *tear rolls down face*
