It seems that ECW gets a pass at times but they really had some bizarre matches and finishes. Let's compile a list. The one I just saw from Guilty as Charged 2000:
Simon Diamond, Danny Doring, and Roadkill defeat Nova, Kid Kash, and Jazz after Roadkill pins Chris Chetti following a top rope splash.
HUH?

That evening the role of Hogan was played by Roadkill, and Chris Chetti assumed the Ric Flair position.

How does Chetti come into this?

Chetti came out to help Nova after Jazz, Kid Kash and Simon Diamond all fought to the back. It was turned into a regular tag match because of this, I think.

Ugh, this kind of junk happened a lot in the last couple of years of ECW, though it happened before as well. Hey, it's an interview! Wait, it's a singles match! Oh no, actually it's a triple threat match! Oh isn't this cool now it's a tag match where the original participants aren't even there!
No, it's not cool, and these segments would normally take upwards of a 1/2 hr and weren't normlly good.

As much as I loved the Anrachy Rulz 99 PPV (and the VHS of it was my first exposure to ECW), it had 2.
Jazz vs Tony DeVito turns into Nova & Chetti vs Simon Diamond and Tony DeVito, which turns into a New Jack clustershmozz brawl with no winner (because Chetti got legit injured).
And Steve Corino & Rhino vs Tommy Dreamer & Raven for the ECW Tag Titles ends when Dreamer pins.....Jack Victory.

Sometimes the changing the amount of Partners worked pretty good. The Dreamer/Beulah Vs RVD/Fonzie that became the classic Beulah Vs Fonzie is one of my favs.
But with weird endings, obviously Rhino winning the ECW title from Sandman. And what was the deal with that Chick that attacked Funk during Barely Legal. She was going to be the newest member of the flock, but I can never remember seeing her again or remember her name.

In fairness, Dreamer pinned Corino while Raven may or may not have been pinning Victory. (He was sitting on top of him.) The ref appears to be counting out Corino after Dreamer and Raven hit DDTs at the same time.

The one that came to my mind when I saw the topic title was GAC '01. Nova v Hamrick. Nova gets fast counted by Chris Chetti for some reason, Spike Dudley comes out there's this whole argument, Chetti gets acid dropped and then Nova pins Hamrick when Spike counts the fall.
Although it did lead to some of my favorite Styles-Cyrus banter
Cyrus: Explain to me how the little retards pin counts any more than Chettis
Joey: He's not retarded, he's special
Cyrus: No you're special, he's retarded
