Has he ever explained why the female leads in several of his movie first and last names started with "V"'s?
Billy Madison: Veronica Vaughn Happy Gilmore: Virginia Vennet The Waterboy: Vickie Vallencourt Little Nicky: Valerie Veran
Also odd: Mr.Deeds: Babe Bennett Punch Drunk Love: Lena Leaonard
Has he mentioned a specific reason? Is it a superstitition thing?

And the double "V"'s seemed to pop up in every other movie. I personally think it's a superstition thing myself.

The use of alliteration in names is an easy way of getting the audience to remember the character. The same thing was done in Stan Lee comics. Peter Parker, Reed Richards, Sue Storm, Scott Summers, Bruce Banner, etc.
